I don't know if he hid out in a church or mosque or other religious building or any Embassy, but he did get into the habit of being in places with lots of civilians in proximity that couldn't easily be labeled military targets and where, therefor, avoided by our forces.. Also, he had a group of chair carriers whose job it was to haul around an inspected, bomb free, safe chair for him to sit on where ever he went.
And, since when are we Floridians "Suth'ners"? We don't talk funny like y'all do up in places like Virginia or the Carolinas or whatever holler you're from :P

Its true that one of Saddam advisor once said if the condition becoming more worse & in emergency, Saddam should try to hidden in the place like that but Saddam pride's can't prohibited him to do that
Probably in the Gulf War, Iraq position is still strongth enough and in the end, they can even forced the condition into stalemate (with the help from UN too)
Iraq be punished by embargo while USA president Bush must step down for his decision to continuously attacking Iraq area after succesfully liberated Kuwait from Iraq grips

It was a UN Peace Enforcement Mission. Not a War. Saddam Hussein would never hide in a church. Only one member of his Revolutionary Command Council (Tarik Aziz) was a Christian (Chaldean Catholic). He had several bunkers in and around Baghdad to hide in.
The one who did hide in an embassy of sorts was the former President of Panama, Manuel Noriega. After we launched an invasion of Panama in response to that nation declaring war on us during the administration of George Bush the Elder, Noriega took refuge in the compound of the Papal Nuncio in Panama City.

We targeted his living areas, but he was hiding in a residential area.
You know, he went to his cousins house, or something and watched soccer until the war was over.
But really, he used to hideout all the time. He was always hiding. He built safehouses and had bodyguards that looked like him.
However, after searching on google for awhile, I couldn't find that he specifically hideout in a church or an embassy.
