The key to peeling boiled eggs is to let them sit in cold water (or water and ice) immediately after cooking. The temperature shock to the shell makes it pull away from the cooked egg on the inside. This also stops the cooking process, so they won't get over-cooked.
After about 10 minutes, lightly rap the egg on a paper towel on your counter. Roll the egg around under your palm so that the whole shell gets cracks in it. Then peel away.

Hard boiled eggs are fun to peel. Crack the bottom by tapping it with a spoon. Ther crack the top and remove only the top and bottom portions. Then palm the whole egg in your hand and blow from the top. The egg will come out and the shell will be left in your palm.

Most of the time, people do not like hard cooked eggs because of the sulfur taste of the over-cooked eggs. The secret to perfect hard cooked eggs: cover eggs with cold water. cover pan, set on cold unit and heat to rolling boil, turn OFF heat and let stand for 20 min. Remove from stove. IMMEDIATELY pour off hot water and pour on cold water. replace cold water until the eggs are completely cool.
Peel the eggs by tapping them on a hard surface and turning in your palms until they are cracked all around, then rub them between your two palms. start removing the shell from the large end of the eggs and it will slip right off with the membrane.

Place a paper towel on the counter top. Make sure the egg is cool and then crack the bottom on the paper towel. Peel the shell off in the paper towel and then with another clean paper towel (or a corner of the counter top towel that is clean) wipe the egg clean of any excess shell that might still be hanging on.

if they are still hot, under running cool water from the faucet smack the egg so the shell cracks then peel it with your finger off, if the eggs are cool down already then just crack the shell peel it off and then rinse it with cool water

after you cook them drain the pot, then close the lid and shake them around to crack them. then just peel under cold water. rachel ray told me to do that
