The easiest way to caramelize sugar is in the microwave.
Caramelize Sugar in the Microwave
Combine 1 cup sugar with 1/3 cup water in a 4-cup glass measure. Cover tightly with plastic wrap, pierce the top of the wrap once with a pin. Cook on high, without stirring, as follows: soft-ball stage—5 minutes; hard-ball—6 minutes; hard-crack—7 1/2 minutes.

Caramelized white or brown sugar is really the same thing, the temperature is the important thing. 340 degrees F . If you put your sugar in a pot and add just enough water to resemble wet sand, place it on the heat and bring to the boil, (get a candy thermometer) place the thermometer in the pot and let the sugar boil until it reaches about 320 F (it will continue to cook). DO NOT STIR, if you stir the sugar may crystallize (turn into a rock) and you have to start all over again. This will go rock solid when cool, if you are looking to make a caramel add some cream, this will not allow the sugar to harden. Good Luck

I have done many of them through the years. In my experience they work best if you don't need super-fast results, and they create only a mild affection (so I wouldn't really recommend them as a love spell.) I would say they are best when you have a business acquaintance or boss you need to stay on good terms with, where you're going to be together for a while. I recall one I did where I actually did require fairly fast results, so I was burning candles daily. It was on an agent who was to be responsble for showing some of my writing to someone important. My own agent reported back to me that -- rather inexplicably -- the agent adored me and thought I was great. Another notable instance was a time I had been doing a jar on a girl I wasn't getting along with, and she knew about it. One night I lit the candles and as it burned down, the old wicks and wax caught fire and made a rather large flame that burned very hot. That night we had a falling out, and I went to remove her paper for the jar. When I opened it, I found the hot flame had scorched her paper inside the jar earlier.

Carmelizing sugar alone...
In a sauce pan pour in one cup of sugar and one cup of water. Put the heat on to just under medium. The sugar will slowly dissolve into the water and begin to heat up. As the water dissolves, the sugar water will slowly heat up (remember that evaporating water will cool it down.) As the sugar approaches the carmelizing temperature, it will begin to turn brown. The goal here is an almost reddish-brown, but you will need to remove the sugar from the heat before it gets there, as it will continue to carmelize until it cools down.
To make caramel or butterscotch...
remove from heat add some room temperature butter (not melted), mix it in, and then add some cream. The exact proportions don’t matter

* are you making like a creme brule ?
then sprinkle some brown sugar on the top of the custard and then put it under the broiler for a couple min. watch it closely cause it could burn quickly.
