Eat it... There's more to eating than calorie counting. Olive oil offers a lot of flavor and olive oil is good for you. Also, it sounds like you have the "fat" concern under control since you're only brushing with a small amount of olive oil.
Traditionally, eggplant is fried in olive oil. Eggplant is a notorious sponge for olive oil, but you're good the way you're preparing it with a controlled amount olive oil.

Olive oil is one of the best fats you can consume. Everyone needs to consume a little fat. Olive oil is actually a great choice.
Fried eggplant, of course, is terrible for you because it's a very porous vegetable (even more so than potatoes) and it absorbs a lot of the oil it's fried in.
As long as you eat a healthy diet, brushing a small amount of olive oil onto eggplant is probably actually pretty good for you.
If you're STILL overly concerned with the fat intake, they make olive-oil flavored spray. It's a nonstick cooking spray, like Pam, and you can find it in the same place, by all the cooking oils and sprays. It's pretty tasty.

Unless you drowned the eggplant in the olive oil than there is no problem. If you just brushed it on there you probably have less than a serving ( of oil that is) of all the oils you could be using olive oil is the best because it is lower in saturated fat than say vegetable oil. As for it being fat filled....its oil that is all there is. For all you fatophobes out there before you start cutting all fat out of your diets you need to do some research on saturated fats (bad fats) Trans fats (artificial fats) and unsaturated fats (these I believe are the good fats). If you cut all fat out you are cutting out good fats that are essential for heart and brain health. The key to food both good and bad is : everything in moderation!!!

Sure- olive oil in moderation is certainly part of a healthy diet. Just watch how you brush them on- the eggplant will absorb it quickly and may think you need more- but you don’t. You can cut the olive oil with balsamic vinegar. The flavor is incredible (especially if you grill). We do skewers of eggplant, purple onions, yellow squash and mushrooms and brush all of it with olive oil and balsamic vinegar.

You are fine. Olive oil is a "good" fat. You want to stay away from saturated fats, palm oils, and foods with hydrogenated oils, but olive oil and canola oils are good for you in moderation.

As long as the oil you're using is healthy... it's great brushed with oil. You're only brushing it on... it's not like it soaks through and through or you're pouring it on. Olive oil is one of the healthiest choices you can make when it comes to oil for cooking or for salads.
