and Andy T i'm sorry it seems daft of me to ask such a silly question, but i didn't want to make a chicken and brocolli soup, though i didn't make that clear in my question.

Got any rice?
If so, that would make some mighty fine chicken and rice.
Just use the cheddar broccoli instead of cream of chicken.
Man, that's a good idea... might have to try that myself. ;)

Cube and saute the chicken with some chopped onions and maybe some other veggies like zucchini. Cook up about a cup of rice. Combine them with the soup mix and some milk and maybe some additional shredded cheese. Then bake it all for another 30 minutes or so to get the whole mess to blend and melt together.

Well if that is all you have on hand, then grill the chicken under the broiler or BBQ it and then dice it up and place it into the soup. Then you will have a "Grilled Chicken & Broccoli Soup" serve with fresh garlic bread and voila! a meal in a few minutes.

You could always use the left over chicken by making a pan of fried rice with chicken. Make chicken taco out of them. Make a hot open faced sandwich, with fresh gravy and mashed potato's. Sorry I 'm not sure about a casserole dish for you.

That's a nice rich soup. I'd just add a pretty salad and some crusty bread.

Pore it over some cooked instant rice, or a baked potato.
