I love Cookies and I love to cook and bake, here is my award winning recipe:
Award Winning Soft Chocolate Chip Cookies
INGREDIENTS
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
2/3 cup butter, softened
1/2 cup packed brown sugar
2 tablespoons and 2 teaspoons white sugar
2/3 (3.4 ounce) package instant vanilla pudding mix
1-1/3 eggs
3/4 teaspoon vanilla extract
1-1/3 cups semisweet chocolate chips
Directions:
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended.
Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Chewy Brownie Cookie
These cookies are double chocolatey with cococa powder and chocolate pieces.

2/3 cup shortening
1-1/2 cups firmly packed light brown sugar
1 Tbsp water
1 tsp vanilla
2 eggs
1-1/2 cups all-purpose flour
1/3 unsweetened baking cocoa
1/4 tsp baking soda
1/2 tsp salt 2 cups semi-sweet chocolate chips (12 oz. pkg.)
1. Heat oven to 375 degrees.
2. Combine shortening, light brown sugar, water and vanilla in a large mixing bowl.
3. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture.
4. Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at low speed until just blended.
5. Stir in chocolate chips.
6. Drop rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheet.
7. Bake one baking sheet at a time at 375 degrees for 7-9 minutes, or until cookies are set. Cookies will appear soft and moist - DO NOT OVERBAKE.
8. Cool on baking sheet 2 minutes. Place sheets of foil on coutertop. Remove cookies to foil to cool completely.

Double Chocolate Chip Mint Cookies
This cookie dough has cocoa powder as well as chocolate chips, plus mint extract, & uses melted butter, rather than a creamed butter-sugar mixture
1 cup cocoa powder
1 cup a.p. flour
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup chocolate chips
1 stick melted (unsalted) butter
1 slightly beaten egg1 tsp peppermint extract
Combine in large bowl dry cocoa powder, flour, sugar, brown sugar, baking soda, baking powder, & salt.
Combine and add melted butter, egg and peppermint extract. Stir in chocolate chips. Drop by rounded Tablespoon onto cookie sheet.
Bake at 350 for 12-15 minutes.

I HAVE THE SAME PROBLEM!! Or had, because I found the BEST chocolate chip cookie recipe there is!
It's Betty Crocker, from her first cookbook from the 70's or 80's...It's in the Red and White checkered book that should be available someplace online...FOLLOW THE DIRECTIONS to a tee! I know it sounds dumb, but you can't alter any baked goods recipe, or you will mess it up everytime!!!
Also, keep in mind that cookies will cook for an extra 1-2 mins while they are on the baking sheet before you remove to a cooking rake, so judge that into the cooking time, or they over cook. The cooking time might vary on your oven too, so you might have to try it a few different times before you time it just right....GOOD LUCK!
Try it, they are a huge success for me!!!! People crave them.

Cookies are very easy to make. You'll find many good recipes in a cookbook or in lots of sites online. When making cookies, mix your butter/shortening with sugar really, really well. Also mix eggs in really well. However, once you start adding flour, just mix enough to incorporate well. Over working the flour will give you a tough cookie. Make sure your oven is well preheated. And be careful to not over bake. As with most baking, the more you do it the better you get.

Find any cookbook or web page with a basic cookie recipe to start, like a sugar cookie, peanut butter or chocolate chip. Follow the directions exactly and make sure your oven temp. is correct( use an oven thermometer).
Practice!
You'll do fine.

I used to have this problem. My cookies would come out looking more like small cakes or chewy brownies. Then I learned about "creaming". Are you "creaming" the butter and sugar together?
You have to mix the butter and sugar together first, before adding any other ingredients. The is done by basically mashing and stirring mashing again until you get a smooth mixture.
Once someone taught me about "creaming", I have had no problems since.

it depends an how your oven heats... get a thermometer and place it in you oven... then you will know how to set it next time... and also make sure to mix the flour and soda and powder and salt in its own bowl first... cream your eggs and shortening then add you vanilla.. ( i add a little cinnamon to my bakeings) after your wet ingredients are mixed then slowly add your dry ( flour mix). do not over mix... but the Betty crock er cook book from the 70s is great its the one i use... look on line or at garage sales..

I think it's either something you have, or something you don't.
I use the exact same cookie recipes as my mom and her's are great and mine are only so-so.
If you know someone who bakes ask them to bake cookies with you.
