SINGLE PERSON CHICKEN SOUP

Buy a lg. chicken (3 to 4 lbs.)
2 to 3 average size potatoes
2 med. onions

In large pan, place chicken on rack. Put onions and potatoes, quartered around chicken. Bake at 325 degrees for 2 hours. Eat what you want of chicken (2 to 3 meals). Place carcass in crock pot. Dice 2 potatoes and 3 medium onions, 1 package chicken soup starter, fill 3/4 with water. Cook for 8 hours.

SINGLE PERSON'S CHICKEN ELEGANTE

1 can golden mushroom soup
4 boneless chicken breasts
1 slice onion
1 sm. pkg. cheese, grated
1 sm. pkg. frozen broccoli

Coat a medium baking dish with PAM first. Add all ingredients and mix. Bake at 350 degrees for about 45 minutes. Serve over rice or noodles. Your date will think you slaved all day in the kitchen!

Roast Lamb for One

1 lamb shank
1 sprig fresh rosemary
1 garlic clove, bruised
1/2 lemon, juiced and zested
2 tablespoons red port
1/2 teaspoon olive oil
1 teaspoon kosher salt
Freshly ground black pepper
1/2 teaspoon red currant jelly

Put everything, other than jelly, together into a freezer bag, tie securely, and leave in the refrigerator to marinate overnight.
Preheat the oven to 400 degrees F.

Take the lamb in its package out of the fridge to come to room temperature.

Put the lamb shank along with its marinade into a roasting tin and cook for 1 to 1 1/2 hours, depending on the size of the shank. Turn the shank over halfway through cooking. By the time it is done it should look bursting with bronze color; remove from the pan and let stand 5 to 10 minutes before serving.

While it is resting, put the roasting tin on the stove and stir in a little water and 1/2 teaspoon red currant jelly to make a light gravy. Slice lamb and drizzle with gravy.

My favorite "home alone" dinner is a great salad that's incredibly easy to throw together. Bagged salad is fine, Santa Barbara mix works well. Add dried cranberries, some crumbled feta cheese, and a few walnuts. If you like salad dressing, a light raspberry vinaigrette works really well. It's delicious, filling, and the cranberries, nuts, and cheese make it more of a "treat" than a standard tossed salad.

Penne with Chicken and Pesto

INGREDIENTS
1/4 (16 ounce) package penne pasta
1-1/2 teaspoons butter
1-1/2 teaspoons olive oil
1 skinless, boneless chicken breast halves - cut into thin strips
1/2 clove garlic, minced
salt and pepper to taste
1/4 cup and 1 tablespoon heavy cream
1 tablespoon pesto
2-1/4 teaspoons grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Heat butter and olive oil in a large skillet over medium heat. Saute chicken and garlic until chicken is almost cooked. Reduce heat and stir in salt, pepper, cream, pesto and Parmesan cheese. Cook until chicken is no longer pink inside. Stir in cooked pasta.

I marinate chicken breasts in Italian dressing & cook on George Foreman grill. If I forget to marinate, I just brush the dressing on the chicken as I'm grilling...even done it with frozen chicken. Chicken comes individually frozen in bag so you can easily take out how many you want. I've also microwaved these in covered dish...but I like the grill better.

Very tasty & tender! Great on salads or just by itself! Very simple & hardly no clean-up!

I like to brown up some mince (ground beef to you americans!) and scramble some eggs....warm some tortillas, add a little salsa, sour cream and have myself a nice "breakfast" wrap - at any time of day.

Failing that an omelette is nice..and easy - you can fill it with whatever's in your fridge or pantry.
