I'll give you some very simple recipes. Get a couple of boneless, skinless chicken breasts. Cut them into small cubes. Season or marinade them according to your taste, with the herbs and spices that you like. Then put them on a skewer and bbq them over charcoal (no flames) like shish kebap.
Another one is:
Again cube the chicken breasts. Add a little olive oil in a wok. Stir fry the chicken pieces, add some mushrooms, chopped/diced green peppers, onions. Season to taste. Additionally you can add a few drops of soja sauce just before they are done.
Serve with any potato dish or rice pilaf.
Quick and delicious.

Fill up a medium sized sauce pan with water, add 2 tablespoons of Italian seasoning, 1/3rd of a cube of butter, add 4 whole Skinless chicken breasts. Bring to a boil until chicken is done. Strain and cube chicken into bite size bits. Put chicken into a 2 inch deep baking pan. Add one bag of broccoli and one bag of carrots (put in as much as you care for). Pour your favorite Alfredo Sauce (I personally like Newman's) 2 jars is perfect. Just so you have barely covered everything. Put in oven at 350 degrees for 20 minutes. While that is cooking do up your noodles. I don't recommend spaghetti, but more like rigatoni or the elbow macaroni. Don't be afraid to experiment with garlic powder, oregano, or even add Italian seasoning to the sauce. Just so long as your taste buds are smiling.

Mozzeralla Stuffed Chicken Breasts

6 Chicken Breasts (Boneless and skinless)
Salt and Pepper
1/2 C. Butter (Melted)
1/4 lb. Mozzarella Cheese (sliced)
1/2 c. Flour
2 Eggs (Beaten)
1 C. Italian Bread Crumbs
1 tsp. Marjoram
1/2 tsp. Ground Thyme
1/2 C. White Wine

Pound chicken to flatten; sprinkle with salt and pepper. Brush butter on top of each piece (reserve remainder). Cover each piece of chicken with cheese slice and then roll up with cheese inside. You can tuck in ends or use toothpick to secure but, I just hold them together and dredge them in flour, then dip in eggs and roll in bread crumbs. Arrange rolls in baking dish. Baste with mixture of reserved butter, marjoram and thyme. Bake at 350 degrees for 20 minutes; then add wine and continue to bake for another 20 minutes or until tender (baste frequently in pan juices). (This recipe never fails to get rave reviews! I am asked constantly for this recipe and it freezes well (just cook the first 20 minutes; freeze and then add wine and continue to cook until hot.)
