What type of chef are they? That makes a HUGE difference.
Custom or top quality holder, roll or case for his or her personal knives; good knives to add to their personal set; or a gift certificate to their favorite, professional/chefs-only cookware store.
Ask their friends, co workers or business/life partners for recommends on the brands for the knives as each chef gets pretty picky about what they prefer to use.
If they're a pastry chef/confectioner, ask another confectioner what gadgets they might want as those can get pretty specialized, or give a gift cert.
Ask their friends/partners what store to get the gift certs from.
Or, since most pro chefs are really pressed for time, always work very long hours and are always tired, sore and cranky after their shifts, spring for an in-home massage from a licensed person who also does aromatherapy. Many will go to the workplace instead of a home.
Get one who does swedish massage or deep muscle work and who also will do specialized foot massage. Or reallly surprise them with an entire day at a spa.

Even when he was a chef I guess he would prefer a other gift as something for his kitchen.... Make a Nice Picture of all the workers make it larger let all sign it and get a nice good looking frame Well I would do it

Maybe something else besides something that has to do with cooking, cause even though they are a Chef they may want something non work related. A gift certificate for a massage, now that might work out well.

A Gift Certificate to William Sonoma or Crate and Barrel. Order some baked goods from Zabar's in NY or put together a basket of various items such as Parchment Paper, apron, spoons, etc. as long as they are high quality items.
I would do Zabar's though, I send the rugelagh and babka to tons of people as gifts and people are amazed!

I would get a basket or bowl and put in a good bottle of olive oil and balsamic vineager, some good spices, etc. and some kitchen towels, things like that. The chef probably has a bunch of gadgets, so I would give him or her something they can use to cook with

Well, bout the only reason why I'm not a chef is because I didn't attend any culinary school, but I know if I were to get anything to help me in my craft it'd be some Shun knives. These things scream pro.

I'll be honest here. Nothing food related. We already have a ton of cookbooks, we buy utensils and kitchenware when we need them, we have too many of them, chances are we already have it. And as far as food, we're sick of seeing it constantly, so that might not be a great idea.
Maybe a bottle of their favorite Scotch or wine, wine charms for glasses, a nice picture frame, or a keepsake box. Or a photo album or scrapbook. Or a small wine rack (6 bottles or so). Do they have or want a picnic basket?

As a Chef myself I know I can get all the recipes and tools I want or need, and actually prefer do get them myself.
I have found old cookbooks and antique cooking implements interesting, if for nothing else decoration. You might introduce him to that.
