Absolutely. However, meatloaf isn't traditionally wrapped in bacon, but who knows? You may be on to something! You should add about 1/4 to 1/2 cup of water, or maybe tomato juice for moisture. If you have any spices, try adding some garlic and/or onion POWDER, not salt. Let me know when dinner's ready! good luck!

Sure! That's the beauty of meatloaf: it's flexible. Not everyone likes it drowning in catsup. I've never tried it, but the parmesan sounds yummy, especially if it were freshly grated. In a pinch I've also used crushed crackers or oats for the binder instead of bread crumbs. Just throw in whatever you have on hand.

You are going to need a little liquid like milk or tomatoe juice.
EASY ITALIAN MEATLOAF
2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste
Preheat oven to 375°F.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.
Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.
Bake uncovered 1 1/2 hours.
Cut this recipe in half if needed

if you have seasonings you can, add minced onion, catsup, hot sauce, a pinch i mean a pinch, black pepper, thyme, diced red and green bell pepper and sliced white mushrooms salt to taste, add your ingredients. note you can dice your bacon and render it, add the bacon and its drippings to your meatloaf mixture. mix it all together place in a loaf pan. gently pat down and spread some catsup on the top of meatlosf. if you have a piece of parchment, cut a piece to fit the tom of the pan and then bake tha bad boy at 350 degrees until a tooth pick comes clean after sticking it into the center of meatloaf. enjoy
yoe can do this with turkey and or chicken or mix.

Have about 1/2 cup of catsup, a can of tomato soup, tomato paste, or tomato sauce? As using one or the other will greatly improve the taste. I don't know about using very much bacon, as you don't want it too greasy, but I think the bacon taste would be good.

This is a good start but you will need a liquid like milk or tomato juice to make it nice and moist. Also some diced onion and some garlic powder will add to the flavor. You're making me hungry.

Absolutely, just make sure you use herbs if you have them, and garlic powder too.
Do you have any yogurt in the house? Yogurt keeps the meatloaf so moist and yummy. If not, try this the next time.

It should work, but if you could add some celery and onions (black pepper)...it would be better...but it will work.. Depending on how lean your beef is, you probably won't need the the bacon.
