How to Make a Chocolate Cake
If you are seeking a recipe for a scrumptious, delicate, moist, made from scratch chocolate cake like Grandma used to make, this is it!
Ingredients
* 1 cups of milk
* 2 cups of all purpose flour
* 3/4 cup powdered sugar
* 1 1/2 teaspoons baking powder
* 1 cup of water
* 1/2 cup of cocoa
* 1 teaspoon salt
* 1 teaspoon baking soda
Steps
1. Preheat oven to 350 degrees F.
2. Grease and flour a 9" x 13" cake pan.
3. In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.
4. Add eggs, milk, vegetable oil and vanilla. Beat with an electric mixer on medium speed for 2 minutes or by hand.
5. Pour into prepared pan. With a spatula distribute batter evenly in the pan.
6. Bake for 35 to 40 minutes.
7. Cool completely and frost with your favorite frosting.
Tips
* This is a very delicate cake. If you opt to remove it from the pan, do so after a 10 minute cooling period.
* If you plan on placing the cake on a cake board or foil lined cookie sheet, place the board or cookie sheet on top of the cake pan. Hold your hand on the center of the board or cookie sheet and slide your other hand under the cake pan and in one motion, flip the cake pan upside down, so the cake is gently placed on the board and not flipped and dropped from the pan.
Warnings
* Flipping from the pan without cake board or foil lined cookie sheet support may cause large cracks in the cake.
* Cooking spray comes in handy for oiling and flouring cake pans. Do not over flour!!

Texas Sheet Cake
For the Cake:
2 cups sugar
2 cups all-purpose flour
1/4 cup cocoa
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup butter (1 stick), melted
1/2 cup buttermilk
1/2 cup canola or other vegetable oil
1 cup water
2 eggs, lightly beaten
1 teaspoon vanilla extract
- Preheat oven to 400°F. Grease and flour a 13x9x2-inch baking pan.
- Sift together the sugar, flour, cocoa, baking soda and cinnamon, and set aside.
- Stir together the remaining ingredients.
- Mix the wet ingredients with the dry ingredients, stirring until you have a smooth, rather thin batter.
- Pour into your prepared pan, and bake at 400°F for 20 to 25 minutes, or until a toothpick comes out clean.
- While the cake is baking, prepare the frosting.
Frosting:
1/4 cup plus 2 tablespoons milk (whole, 2% or skim - doesn't matter)
1/4 cup cocoa
1/2 cup butter
1 pound confectioners sugar, sifted (about 4 cups)
1 teaspoon vanilla extract
1 cup chopped pecans
- Mix the milk and cocoa in a heavy saucepan (stir, stir, stir). Add the butter and, over medium heat, stir until the butter melts. Remove from heat and gradually stir in the sugar and vanilla until smooth. Add the pecans.
- When the cake is just out of the oven, spread the frosting evenly on the hot cake.
- Being a chocolate freak, I use just a half-teaspoon of cinnamon in this cake. I want the cinnamon flavor to come through, but I don't want it to overpower the chocolate.
- If buttermilk is not a staple item at your house, this is a good recipe in which to use dry buttermilk. For a product review, see Dry Buttermilk.
- If you aren't sure about your oven, you can test it with one of those little dime store oven thermometers. With its comparatively thin batter, Texas Sheet Cake requires every bit of the 400° heat in your oven, if it's going to get done in 20 to 25 minutes.

ITALLIAN CHOCOLATE CAKE
Cake:
3 cups all purpose flour
1-1/4 cupe unsweetened cocoa
2-1/2 tsp. baking soda
1-1/2 tsp. baking pwoder
1/2 tsp. salt
3 cups sugar
1-1/4 cups vegetable oil
2 tsp. vanilla
1 cup Whole Milk Ricotta
3 large eggs
2-1/2 cups water
Chocolate frosting:
12 ox. quality milk chocolate
1 cup sour cream at room temperature
Preheat oven to 350 degrees. Grease bottom and sides of two 9" cake pans. Sift dry ingredients, mix together in bowl, set aside. In mixer bowl, mix sugar, oil, ricotta and vanilla on medium speed for 2 minutes. Add eggs. Beat until incorporated. On low speed, beat in flour alternately with water in 3 additions. Scrape bowl and beat at medium speed for 1 minute. Divide equally in pans and bake for 35 to 45 minutes until cake test done. Cool in pans for 10 minutes and then turn onto plates. Frost when cakes are cool.
Frosting: Melt chocolate over simmering water, stir until smooth, ltet cool to room temp. Mix sour cream into chocolate with a wire wisk. Frost the first layer,to with second layer, then frost the top and sides. Garnish with chocolate shavings, raspberries and whippd cream as desired.
