Evaporated has had most of the water boiled out, it's thicker and sweeter than condensed which has been put under pressure to remove water. It really depends on the recipe and what you are doing with it if makes a difference. Generally the more you use and the less it cooks, the bigger the difference. Just remember to taste it, if it has been opened. Because the worst taste in the world to have in something is the taste of spoiled milk.

The two products are made in a similar way, so it's easy to become confused. Both use a special process to heat milk until about 60 percent of the water evaporates. After evaporation, fat may be removed to produce the nonfat or low-fat type. Evaporated milk is then canned and heat-sterilized. The added sugar in sweetened condensed milk acts as a natural preservative, so no heat sterilization is needed. Both products can be stored at room temperature for up to 24 months.


Sweetened condensed milk is made by heating whole milk with a large amount of sugar (the milk mixture is about 45 percent sugar). It's often called for in candy, fudge, and other dessert recipes, such as homemade ice cream.

Evaporated milk can be diluted with an equal amount of water and substituted for fresh milk in recipes and even for drinking. Or it can be used undiluted in recipes that specify it. Undiluted evaporated milk has a rich flavor and a consistency as thick as heavy cream, but it contains a lot less fat and calories -- a savings of 18 grams of fat and 125 calories per 1/4 cup!

Evaporated milk has about 60% of the water or liquid in the milk taken out. Condensed milk goes thru the same process of evaporation but has about 35 - 40% sugar added to it to make it very very thick and super sweet. It would definitely make a difference. And don't confuse the term unsweetened condensed milk for being condensed milk coz it's not. It's simply evaporated milk again. :D

There is a big difference. Evaporated milk is like 2% milk and condensed milk is thick and sweet. The texture and mainly the taste would definetly affect the outcome of the food.

Condensed Milk, is thick and very very sweet. Evaporated the best way to discribe it would be like a 2% type of milk. Yes it will make a difference in taste and in texture.

It makes a big difference. Evaporated milk simply has some of the water removed. Condensed milk is much sweeter because it has sugar added to it after the water is removed. They are not interchangeable.

There are other levels of suffering as well, like when you lose someone you loved very much, the pain of that loss causes your heart to endure this, and it can take a long time to heal, or never heal at all. Condensed milk is thicker and sweeter and Evaporated milk is more waterd down and it isn't sweet!!...ANd yes t does make a difference in recipes!

condensed milk has sugar added evaporated doesn't and yes it does make a difference in your recipe and they are not interchangeable.

Evaporated milk is milk with 60% of it's water content removed.
Condensed milk is thickened evaporated milk with sugar.
