I use a an egg (beat it w/ a little salt and pepper). Make sure the zucchini is dry before dipping it in the egg other wise the breading will fall off during frying.

I have cheap and expensive non stick pans. Both are great. One thing though is you must heat up the pan first before cooking anything or it WILL stick. For example .... when I cook an omelette, I spray with non stick spray, heat the pan over medium heat, then once it is heated I add the eggs. When frying, I let the oil heat before adding my food. Before I knew about letting the pan heat and letting the oil get hot, all the breading would float off of the food -- then the food would be "naked" and the breading would be burned to a crisp. Hope you can figure out what is happening and can get those non stick pans help make your life and cooking better.

I make pancake batter, dip the zuchinni into it and fry it in oil. Very good and very tasty.

I use egg wash with a dash of italian salad dressing. If you are more partial to ranch dressing you can mix a little powdered ranch into it also.
