CUCUMBER TOMATO SALSA

2 large cucumbers, de-seeded and chopped
6 plum tomatoes, de-seeded and chopped
1 medium red onion, chopped
2-3 tablespoons cilantro (depending on your taste)
1 packet of Ranch dressing powder
¼ cup rice wine
¼ cup rice vinegar

Mix together and serve with chips. Also great as a salad. Refreshing and different - especially for summer

JAPANESE NOODLE, SHRIMP, AND CUCUMBER
SALAD

2/3 c. rice wine vinegar
1/4 c. soy sauce
1/4 c. vegetable oil
3 tbsp. sugar
1 tsp. dry mustard
Pinch of cayenne pepper

SALAD:

1 lb. fresh bean sprouts
14 oz. dried soba noodles
1/4 c. oriental sesame oil
2 lbs. cooked bay shrimp
3 lg. cucumbers, peeled, halved, and thinly sliced
6 green onions, sliced
Red cabbage leaves

For Dressing: Whisk together vinegar, soy sauce, oil, sugar, and mustard in small bowl. Season with cayenne pepper. (Can be prepared 1 day ahead. Cover and leave at room temperature.)
For Salad: Blanch bean sprouts in boiling water 30 seconds. Drain and refresh in cold water. Drain. Bring large pot of salted water to boil. Add noodles and boil until tender, stirring occasionally, about 3 minutes. Drain noodles. Refresh in cold water. Drain and place in large bowl. Add sesame oil and toss to coat. (Can be prepared up to 6 hours ahead. Cover and refrigerate bean sprouts and oriental noodles separately.)

Add bean sprouts, shrimp, cucumbers, and onions to noodles. Drizzle with dressing. Toss gently to combine. Line platter with cabbage leaves and mound salad in center.

CUCUMBER SOUP

2 c. peeled and coarsely chopped cucumbers
1 c. chicken broth
1 c. light cream
1/4 c. chives, chopped
1/4 c. celery leaves, chopped
3 sprigs parsley
3 tbsp. butter
2 tbsp. flour
Salt and pepper to taste

Buzz all ingredients in blender until smooth. Serve either hot or cold. If served hot, garnish with a small amount of dill weed. If served cold, garnish with finely chopped cucumber and a bit of grated lemon rind.

Cucumber salad ... that's the only one I know of .. possibly because it's my alltime favorite food.

Fairly fast and simple to make. Slice cucumbers and chop into squares, add salt and pepper. Then add 1/2 & 1/2 cream and vinegar ... about 1/10 the amount of vinegar as cream. My grandmother adds onions, but my mother boycotted them and I prefer it without. My kids could care less either way, lol. Stir, chill, eat.

You could make a Thai cucumber salad. Peel and slice cucumbers really thin. Slice a red onion into thin slices. In a bowl, mix rice wine vinegar, a little bit of sugar, red pepper flakes and a litte bit of water in a bowl. Place sliced cucumbers and onion in bowl and place in fridge to marinate for at least 2 hours. Enjoy! Happy cooking!

Cucumbers and chicken! Slice or dice up cucumbers. Put a little bit of vinegar on them. A dash of chile paste or chile pequin and sugar. Stir up and add chicken! MMM

Skin the kukes, slice them, put in a bowl with a little garlic salt, pepper, olive oil and vinegar with some chopped or sliced onions and cut up fresh tomatoes. Very Greek and Italian and very good. Best if left for several hours to pick up onion flavor.

Slice a cucumber into 1 inch thick rings..... hull out the center with the tool you use to make melon balls ( or a spoon )... then fill the center with crab salad or something along those lines... MMMMMM!

I like to slice them, cover with apple cider vinegar, salt (optional), black pepper, and sometimes I add sliced red onion. Put in the fridge overnight; a delicious snack. I like the apple cider vinegar because it has a slight sweetness. If you like spicy foods, add crushed red pepper. You can add just about any veges you like. Delicious!!
