Yes. Vinegar is good to use as a light seasoning. Red Wine vinegar is good with it.

It should be ok as long as it is not poured on the bread itself. If you have salad in the sandwich, dress the salad with the vinegar. Or put some in the tuna before putting it on the bread.

of course...
1/4 cup olive oil
1/2 cup red wine vinegar
1 red onion, sliced very thinly
1 can tuna
capers
sliced kalamata olives, to taste
1 fresh tomato, sliced 1/4-inch thick (or several cherry tomatoes)
leafy greens (romaine hearts or spinach work well)
fresh bread (I use italian, cut on the slant)
Using a small bowl, mix olive oil and red wine vinegar together.
Place onions in mixture and let marinate while you prepare the rest of the ingredients.
When ready, set out bottom slice of bread, drizzle thinly with the oil-vinegar mixture, and layer onions.
Follow with capers and olives, tuna, tomato, leaf green, drizzled lightly with oil-vinegar mixture and top slice of bread.
Squish everything together and let sit for a few minutes while you clean up, bring plenty of napkins, this is one messy sandwich!

Yes look at subway they ask you all the time Oil and Vinegar. Try it it might be good that is how I make some killer dishes I test my ingredients.

I use balsamic vinegar and oliive oil on my sandwiches frequently. That's what I have put on my sammies at Subway, too.

If you like vinegar, then use it! I wouldn't use too much though, as the bread might get soggy, but i think it will be fine!
