You block the arm wielding the knife and you slide your arm down as you grip the wrist. Then you twist the wrist, causing the attacker to drop the knife.
That's in an ideal world. I know how to do this and I've done it in training. The words above won't help you to do it however; they're just words. Your body doesn't know what they mean. I could give you a lot more details, but that would just boggle your mind down. All I'm saying is I'm willing to put this information up here because it's mostly meaningless. Just the "twist the wrist" part would take a while to explain fully. Same goes for "Block" and "slide your arm". Plus, your question is very vague. Is the guy just holding the knife? Is he thrusting it forward? Is it coming High? Low? Sideways? All these things call for different responses. If you really want to learn this kind of stuff, you'll get in a school and learn it.
As for a gun, forget it. What I would do with a gun is talk calmly and try to figure out what the guy with the gun wants out of this. You don't argue with a gun unless you have one. And I don't carry one because that's not the kind of argument I want to get into.
Cheers.

OKay so you really need training for unarming attackers. But first thing is GIVE THEM WHAT THEY WANT. I mean NOTHING is worth losing you life over. But a handy move I learned if they are holding the knife/gun out in front of you. Hit the front of the wrist [ where the veins are] and the back of the wrist. If you hit both at the same time, fast and hard the knife/gun will go flying!

There is nothing you can learn online that will help you. You need to be taught by a qualified instructor. Way too dangerous to learn by yourself. Especially a gun. Even then, you have to ask yourself if it's worth the chance. Are you being robbed, or are you defending your life. Better to give up the wallet than risk getting killed. You should only disarm guns in very close quarters anyway.

Give him what he want...don't take your chance, it's not worth it, nobody is gonna laugh at you, cause it's not a fair fight. I am a black belt and I was robbed once by a man with a gun, I gave him my wallet and my watch. I am glad I did it because at the time I didn't know his partner who also had a gun was standing behind me. I could of got myself killed if I tried to disarm the guy in front of me. Not to worry, those losers can't live long with 20 bucks and a watch, their luck will run out if they keep at it, on the other hand I made all that lost up in less than one day of work...

Yeah, here's a surefire way...pull out your wallet and hand em over to him, then give him your watch, ring, i-pod and cellphone. Give him as many valuable things you carry on your person as you can. Pretty soon, his hands will be too full of your valuables to keep his weapon pointed at you and he'll either tuck it away or if you're really extremely lucky, throw it away. When he does that, run like hell and don't look back : P You know the game rock, paper and scissors? Well a gun beats all three, so forget about punches, chops or eye pokes, it'll just give him a good reason to pull the trigger.

For gun, grab their dominate hand at the wrist with your oppossite hand, while placing your other hand on their shoulder. Pull down and to your side *** you are driving your knee to their diaphragm. This should knock the breath out of them. Theres different things you can go to from this but thats the best way.
Easiest thing (not the best or glamorous) to do to remove a knife from one's hands is to wrap a jacket around your arm and swing wildly.

Your best bet, avoid getting yourself in a situation where you have to deal with people wielding guns and knives. Even with proper training in disarming people with weapons prison guards, police officers, and soldiers still get injured or killed anyway. There's far too many other factors in the situation such as the enemy's skill with a weapon, positioning, temperament, and luck.
In a situation like that try to throw something in their eyes or at their face and run like hell. It might work it might not. There are no guarantees with violence.

It depends if they're an amiture or proffesional. You can tell by the way they hold the gun and how close they are to you. If they're out of arm/leg reach and are holding the gun properly, they're a proffesional, you do what they tell you to do. If they're holding it loosely/akwardly/"thug" style(side ways)/ and are extremely close to you, they're an amiture.
I'd suggest you take some self-defense classes in order to do it properly, else you're going to get some appendage blown off.

well, if someone pulls a knife on me, they had BETTER be ready to use it. Because, when I see it come out, that's when I decide, "I WANT THAT KNIFE." and I'm gonna do anything I can to take it from him. I won't worry about anything else in the world until I have that knife safely in my possesion.
as far as a gun goes......
ask him what he wants and give it to him
