Well when I think of hispanic culture I usually think about ceramic pottery.
I would shop around and find a low large clay bowl and some smaller bowls (like 4). If you are really feeling crafty you can get some clay from the craft store and make them yourself for an extra personal touch (they have self-drying clay that doesn't require a kiln, and some that can be done in your oven)
Paint them in the wedding colors, perhaps even create your own signature design inpired by old mexican pottery. Seal with a clear coat you can get from any craft store.
In the larger bowl you can put either silk or real flowers (whatever is most budget friendly for you). In the small bowls you can put candy or float a single flower head like a rose or a gerbra daisy. Put the on the table in a + formation with the big bowl in the center. Complete the circle around the big bowl with tealights for a romantic feel.
It will be unique and at the end of the night the guest who takes it home can keep it for years to come since the bowls will make great serving dishes for soups or chips and dips at their next party. Perhaps on the bottom of the big bowl (underside) you can sign your new name with the wedding date. People will see the signature design when they use the dishes and think of your wedding and it will be much more unique than the glass vase but still affordable.

As the recipient of a Beta from a wedding reception I don't like the idea. I liked my fish but most didn't and the bride and groom had to deal with the left fish. More than half were left on the tables. Not everyone wants a living creature to take home. We got some mini bottles of Liquors in the States and added some chocolates along with a couple of Liquor glasses in a heart shaped box. The cello boxes looked very pretty on the tables and a taped "winner" on the bottom of one plate at each table was a hit. The winner obviously took home the centerpiece. So many good ideas other than fish. We had a wonderful wedding for just over $5,000

It would help if we knew more of what you are looking for. It's not just a hispanic tradition that guests take the centerpiece, that is pretty much an overall wedding reception tradition.

As far as real or silk, it's all up to you. I like real flowers, but if you choose to do something like I posted above, I might go for nice silk flowers just since they live longer.

You have so, so many choices!
My uncle and his wife bought inexpensive flowers in their wedding colors, planted them in pretty pots bought at the dollar store and painted with $2 cans of spray paint (looked really nice), and gave them away.
I bought red glass vases from the dollar store ($2 each) and filled them with wildflowers from the flea market, then gave those away. The bunches of wildflowers were $2 or $3 a bunch. Each of us had approx. 200 people at our weddings.
One wedding I went to, they used glass bowls, covered the bottom with glass or acrylic beads (found at craft store for $2 a bag), and put a fish in each bowl. Those were sent home with guests.
One wedding had "bouquets" of handpainted champagne flutes filled with Hershey kisses in the middle of the table. The bridesmaids had used acrylic paint and paintbrushes to paint swirls and hearts in wedding colors on the glasses ($2 each), then bundled them in the middle. As guests left, they each took a glass.
I don't know what your budget is, but I hope I gave you a few ideas.

Our wedding is really informal and Kitsch, we've gone for a group of 3 helium balloons tied to a big packet of fudge to hold it down, the balloons are in ascending heights, 2 ivory coloured balloons and one clear balloon containing a blue heart balloon, they look really funky. As there are children attending the wedding we intend to give the balloons to the kids as they are leaving. We're also putting candles in glass jars on the tables and sprinkling with heart shaped confetti.

What about a small glass bowl with flowers and real fruit or even something made of candy/chocolate. We had candles at ours.

I really like the idea of buying a really pretty small fishbowl and filling the bottom with marbles to match your colors and putting betta fish in them.. they are georgous.
