I know I need to fast for 12 hours prior to the test. However, will a meal roughly 15 hours prior to the test affect it? (i.e. prime-rib, or shrimp.) These things are high in cholesterol.

A meal 15 hrs before blood sample is collected does not alter lipid profile.

The Cholesterol level in your blood is determined by your usual diet not by one meal. The reason for fasting is to allow your Triglyceride level to return to its usual level. You should stick to your normal diet pre testing so if you have a raised level of either blood fat then it can be corrected by eating more healthily. Avoiding fats immediately pretesting gives a false result if you are then going back to unhealthy eating straight after testing.
