I like to get all my chopping out of the way, so I do it on the week-end. Potatoes are something I dread doing on week nights when I have little time.

avoid trying to freeze them, big companies have machines that rapidly freeze vegetables and thats fine but if you slow freeze potatos (as a home freezer would do) they will develop large ice crystals inside the cells which in effect turns the potato into mush once defrosted

try brine instead

Not sure if it works, but I worked in a small restaurant in High School. The boss always had us put the peeled potatoes in a 5 gallon bucket and then cover them with soda water from the bar. Then we put the buckets in the walk-in cooler until we needed them for hand cut french fries. As I remember they lasted for several days without significant browning. Hope this helps! =)

Dissolve fruit fresh in water. Check the label for the amount to use.
Cover the potatoes with the water (you can cut them up however you want first) and put in a covered container.
Refrigerate for up to a week.

We did this in a restaurant I worked in many years ago. They stayed remakably fresh and didn't darken at all.

Raw peeled and cut potatoes will last for several days in the refrigerator, as long as they are kept immersed in water to prevent discoloration.

Raw potatoes do not freeze well. You might consider blanching them (boiling them so they are cooked partway) and then freezing them. You can store them in ziplock bags and pull from the freezer as needed.

if you keep them in water, they can become a bit mushy and lose the starch - best thing to do is to peel them, dip them in water that has a few tablespoons of lemon juice in it, then put in an airtight bag in the fridge...the acid from the lemon keeps them from turning brown.

what you can also do, is invest in a home vacuum seal system, and after the water/lemon bath, seal them up and they will last much longer.

you can keep peeled potato's for up to 3 days in water in the frig before they really start to look terrible. if you want to keep longer then put in water and freeze them.

Try putting them in a large zip lock bag with some cold water, zip it closed and they should remain fresh for you.

put them in a bowl of water in the refrigerator, that should keep them nice and fresh till you need them

use a ziplock baggie. also water in the baggie might help in my experience.
