It depends greatly on temperature and humidity. If the meat's been out for more than an hour make sure you cook it well done. The heat will kill anything that will start in that time frame, but you have to make sure it is heated all the way through.

depends on the ambient temperature. bacteria easily multiplies in temp ranging 27-64 (degree Celcius) so if the ambient temp is between this range its advisable that u do not leave cooked meat uncovered for more than 30 minutes.

I believe four hours is the health department standard. Pork and chicken are more susceptible to spoilage than beef.

Beef, pork and ham about three hours. Chicken and fish, about half an hour.
