What kind of cheese do you like on your grilled cheese sandwich? I just had one with feta, and it was surprisingly good. Munster is still my favorite cheese to use.

A cheese that really makes a grilled sandwich 'pop' is jalapeno jack,(as youv'e mentioned feta)shaved blue cheese,havarti,sharp chedder,
But the secret lies in the bread used....
Pannini,sour dough,marbled rye,whole wheat,even pita bread would work.It takes the sandwich to a whole new level.

I have never toasted feta, maybe I'll give it a try, sounds good. I love a strong extra mature Cheddar cheese on granary bread, real butter, a bit of marmite or some English mustard. Not forgetting the rocket to finish it all of. Delicious.
I also love goats, brie and blue, and all the cheese of Munster....but I've never toasted any of those either, maybe its something I could try over the long bank holiday weekend coming up.

I'd have to second the Cheddar and Swiss combo.
Mozzarella on Rye bread is also very tasty.
A really good grilled cheese sandwich has to have good bread as well as good cheese. If you put your favorite cheese on stale wonder bread, it's still not going to be as good as it should be.

Either fresh mozzarella, or a sharp Swiss along with a juicy full flavoured Roma tomato and a piece of champagne leg ham.

gotta stick with the classics.... gooey american cheese is the most delish! choice for that dish;)
perhaps you should experiment with the types of bread

SWISS AND CHEDDER!!!! YUMMY YUMMY YUMMY. and ranchero is also really good 4 grill cheeses, and especially 4 quesedillas. YUM!
