Not many of us say it all the time ... but I've yet to see a more modern translation of the 23rd Psalm that I like better than the KJV, probably because I learned it as a child and "he leadeth me beside the still waters, he restoreth my soul" just sounds right.
And that's probably the main reason you'll hear a thee or thou in prayer occasionally from folks who otherwise speak modern English: It is a part of their faith heritage, either personally or collectively.

CHRISTIANS say that because it is respectful. That's what it says in the Bible too. When I was taught to pray, as a child, we were taught to use this form. Even in the "Lord's Prayer," which is an example of how we should pray, it says things like "hollowed be thy name."
I don't like the new translations that put the Bible in "modern" English. The whole meaning sometimes changes.

It could be a form of showing respect to God. Of course it is only an outward sign, but it could reflect true reverence for God. You would have to inquire directly with each individual.
