...do they go around to every dentist and check files or what?

They have to have an idea who the person is and obtain that persons records. It would not be possible to check the records of even a small fraction of the general public. Given the length of time since I last saw a dentist, it would not be possible to identify me though dental records.

No, they can usually find out the Dentist's name from family members. Then they can get the dental records for comparison.

Usually done through family members assisting. I have however, had one done using the brand and number of his dental plate.
