I would make orzo. I preffer it to couse couse personally. But if you use rice a roni - get one that has a garlic base and with a few veggies added in it is great. This is how I make my orzo.

1 1/2 cup chicken broth
1 cup orzo
1 TBL of butter
1/2 pakage of frozen carrots/peas combo\
1 stalk celery, chopped fine
1 scallion, chopped fine
1 lemon
1/2 cup of parmasan cheese.

Boil the broth and add the orzo. Add the carrots/peas, celery, and scallion to the orzo about the same time. Then zest the lemon and add to the pot. About 5-7 mins after it has been cooking add the juice of 1/2 of the lemon. When it becomes thick - add the butter and parmasan cheese, stir until blended and creamy.

You can leave out the lemon, but I find that it adds a bit of diversit and brightness to the dish. Orzo is great because you can use almost any veggie in the recipie to add to the pasta.

Toss some hot cooked pasta w/ a generaous heaping tablespoon of basil pesto (can buy in a jar or make your own). Add a bit of butter or EVOO and some parmesan cheese to finish it.
