You are missing one important step. 1) Clean your steak and then season it with kosher salt, pepper, granulated garlic, and granulated onion. 2) Season some flour with the same seasonings and drag your steak through the flour. 3) Now drag the steak through a couple of eggs scrambled with a table spoon of water. 4) Now here is the step you are probably missing. Drag the steak through the flour one more time and let is sit for a couple of minutes. 5) Slowly lower steak into hot oil, it must be hot before you put the steak in.

This is the only way I do it!!!
SOUTHERN - STYLE CHICKEN - FRIED STEAK
1 lb. round steak, about 1/2 inch thick
1 egg
1 tbsp. water
1/2 c. cornmeal
1/2 c. flour
Salt and pepper to taste
Flour plus 2 tbsp. flour
Oil for frying
1 c. milk
Tenderize steak by pounding to 1/4 inch thickness; cut into 4 pieces. Beat egg and water together in shallow bowl. Combine cornmeal, 1/2 cup flour, salt, and pepper together in shallow bowl. Coat steaks first with plain flour, then in egg mixture and finally with the cornmeal-flour mixture. Heat oil in large fry pan; brown steaks on both sides. Lower heat, cover, and cook for 20 minutes or until tender. Remove meat and keep warm while making gravy. Pour off all but 2 tablespoons of pan drippings, retaining any brown bits. Blend in the 2 tablespoons of flour, then stir in milk, salt, and pepper. Cook and stir until gravy is well blended, thick, and boiling. Boil gently for 1 minute.

I suppose that you mean chicken breast!
I butterfly cut the breast first and then I put it between two pieces of cellophane and pound the chicken until it's a bit flattened. Then I beat eggs and spices in a bowl ,set aside place the breast into a plate that contains a bit of flour , and coat the chicken with it then put it into the egg mixture and then into some bread crumbs and fry.

Dip into milk and egg first, then roll in flour and seasonings. Dip AGAIN into milk and egg, and then flour and seasonings. Makes for a nice thick crust....

Double dip it!
Mix a couple eggs w/ a splash of milk, whisk together.
Dip your steak in these items, in this order:
Seasoned flour
Egg wash
Seasoned flour
egg wash
seasoned flour.
Dust off excess and fry at 350ºF.

GOOD CRUST
1 cup of cornmeal
1/2 of a habanero
3 teaspoons of baking soda
1 teaspoon of salt
1/2 teaspoon of sugar
1/2 teaspoon of pepper
2 eggs
1/2 a cup of floor
Put all ingredants in a ziploc bag and shake untill all is mixed together...YUMM

Bread them in a 50/50 mixture of flour and crushed up cheez it crackers, so good you dont need gravey.
