Make him dinner! My boyfriend likes it when I surprise him with dinner when he comes home form work once in a while. It just kinda keeps the magic going. lol.
Now here's the reason I do make him dinner (for whoever gave me the thumbs down) we go back and fourth 'what do you want for dinner' for about an hour and a half before one of us gives in and says what we want, this way there's no fuss, it's done it's ready to go, we have a nice meal then cuddle and watch TV. It's not a b**** get in the kitchen sort of a thing.

You could write him a letter telling him how you feel and what he means to you. Or just take him out for a picnic and say it face to face. You could also make him a scrap book with things that mean a lot to both of you, photos, ticket stubs and things like that.
Good Luck

If you know how to cook, then fix him a dinner of all his favorite dishes.
If you know his favorite movie, then rent it and spend time with him watching it.
One time my wife at the time sent a bouquet of balloons sent to my place of work. Inexpensive and sentimental.
Take him lunch, I did this for my girlfriend and she loved it.
To qoute the Crow "Little things used to mean so much to Shelly, I used to think they were trivial. Believe me, Nothing is Trivial"
Good luck :)

Tell him! Its easy, and fast, if you want to really put some time and effort into it, do something cheesy, like take him to a park and have like glow sticks that says "I love you" written out of them. theres really cheap ways to show people you love them, but i would say the most meaningful way and priceless is just to tell him, and let him know!

What are his interests? Music? Sports? Do something involving that. If he is into music, you can go to a club or something where a band is playing. If it is sports how about you make dinner and watch baseball, football, etc (whatever one he likes) together, especially if you don't like sports.

I can think of something perfect for him if he tends to be the one taking you out, showing you a good time and if you know a lot of his interests:
just take him out on an "all-day" date that revolves entirely around him :D
