The best salsa you'll ever taste:
The Corinthian's SALSA FRESCA
Ingredients
5 cups ripe tomatoes, cored and finely diced
4 jalapenos, seeded, cored and minced
1 medium white onion, finely diced
1 medium red onion, finely diced
1 medium yellow onion, finely diced
1 green bell pepper, cored, seeded and finely diced
1 red bell pepper, cored, seeded and finely diced
1 yellow bell pepper, cored, seeded and finely diced
1 orange bell pepper, cored, seeded and finely diced
2 poblano peppers, cored, seeded and finely diced
1-2 habanero, cored, seeded and minced
1 cup canned tomato sauce (garlic flavored)
1 tsp salt
1 tsp minced garlic
1 tbsp dried cilantro
1 tsp epazote
1 tsp chipotle pepper powder
1/4 tsp cayenne
1/4 tsp cumin
1 tsp parsley
2 tbsp red wine vinegar
1/2 tsp Frank's Red Hot Sauce
Directions
In a large bowl, combine all ingredients. Stir to mix well.
Cover and refrigerate for at least one hour.
Taste for seasoning, add more salt if desired.
*Note* I try to dice all to 1/4-inch dice.

The best "salsa", in my opinion, is pico de gallo. It's very simple to make:
2-3 large tomatoes - seeded and chopped into small chunks
2 medium red onions chopped into the same size
2-4 jalapeno peppers chopped into the same size (leave in seeds if you want more heat)
5-6 cloves of garlic chopped as small as you can
1 bunch of cilantro chopped
2 limes worth of juice
Salt to taste
Mix it all together and enjoy with chips! This is my favorite, but.....
If you want a traditional salsa - put all of the above ingrediants into a food processor until you get the desired consistancy. This is a good base to work off of as these ingrediants are pretty standard in almost any salsa. Once you have this mixture the way you like it you can get creative by adding any of the following to make your own gourmet salsa:
Black beans
Corn
Mangos
Peaches
Pineapple
The sky's the limit - you're bound only by your imagination!

CHUNKY SALSA
1 (4 1/4 oz.) can chopped ripe olives, drained
1 (4 oz.) can chopped green chilies, drained
1 lg. tomato, chopped
1 bunch chopped green onions
2/3 c. white vinegar
1/3 c. vegetable oil
1 tbsp. sugar
1/2 tsp. garlic powder
1/2 tsp. coarsely ground pepper
Tortilla chips
Combine the olives, chilies, tomatoes and green onions in a medium bowl. Combine vinegar and next 4 ingredients in a jar; cover tightly and shake vigorously. Pour vinegar mixture over vegetables. Cover and refrigerate at least 3 hours. Drain and serve with tortilla chips.

you know what? I absolutely looove salsa and making it. But! Nobody can beat Emeril's Southern style salsa. It has like everything in it lol but it's incredible!!! Your local grocery should carry it, or, you can get his recipe online

Well its not exactly a salsa but it is a great dip!
Buy a stick of cream cheese ((not anything special))
Add as much Mexican Cheese as you want
And lastly put a lot of salsa on it and microwave it for 1 minute
Hopefully you like it as much as i do!!! It is great on tortilla chips!
