I've also noticed that the bouquet toss is going the way of shoulder pads and poofy veils and that the garter removal and toss has almost been completely eliminated, I havent seen either one of those at the past few weddings I've been to.

Here's some trends I've seen and would like to see more of:
Minimalist weddings - very simple and elegant
Co-ed Showers - meeting the bride AND groom
Big tubs of iced-down bottled water for outside weddings
Video about couple / slide show while guests wait at reception
Here's some I'm not sure of:
Brown paired with every color (the new black)
Tiaras
Water or Sand pouring in a keepsake jar (replaced the unity candle) (colored water or sand in wedding colors poured into a keepsake jar by couple)
Here's some I'd like to disappear:
Big fluffy - from the dress to the cake to the decorations
The acceptance of "new ettiquete" (who pays for what)
Mints and nuts ('cmon- get creative!)
Importance of "wedding favors" for guests at reception

I think the things that are just insanely popular will kick the bucket pretty quickly.
* Chocolate brown
* Tiffany blue (sometimes paired with chocolate brown)
* Pickup skirts
* Non-white bridal gowns.
Some things I think will stick around a while longer (for better or for worse):
* Tiaras (even though some of them are absolutely ridiculous)
* Photojournalistic wedding photography
* The standard wedding gown, with a corset top and poufy skirt (even though it doesnt look good on SO many body types!)
* Dessert buffets (I love em! I really hope they stick around!)
* All the "classics" (a big cake, the bouquet toss, centerpieces, bridesmaids)
* Guest books that stray from the standard white satin book & pen (and let's be honest, who is ever really going to sit down and read the guest book?!?
* Individualized bridesmaids dresses (Is it really necessary to make it look like the march of the clones?)

Cymbidium orchids: They are every where but starting to fade
Chocolate brown paired with anything: Most popular color scheme in years starting to look a little tired
Mermaid and trumpet Dresses: Really popular right now and beutiful yes but not everyone can pull it off so i think it will fade
Trends that may stick around:
Dessert buffets: whether its cookies, candy or ice cream i think its fun and entertains the guests
Signature drinks: Served at cocktail hour the drink that represents eitehr you as a couple or incorporates your theme. Lots of fun and I cant see that fading
Bridesmaids not all wearing the exact same dress: Your maids are not clones, nor do they all look good in the same thing, give them a break and let them choose something that flatters them that they may actually like.

Gosh, everyone keeps talking about cookie cutter bridesmaids dresses and its making me feel like a jerk for choosing one style for the girls to wear. At least they got a vote and I picked something that looks good on all of them. Not to mention it was super affordable. I couldn't find complimentary styles in the color I needed, so it seemed like the best option, but maybe its time to go back to the drawing table. Damn. Anyway, to answer the question:
Super trendy:
the color brown (which I kinda like, but it probably won't last)
Monogrammed everything
I think the brightly colored tux vests are finally on the way out
pick up skirts (some girls look cute, but most look like melting cupcakes)
cupcake towers (not a fan, I just don't care for cupcakes)
candy bars
foufy cake toppers
Here to stay:
personalized details
signature cocktails
ice sculpture martini louges (sp? Those things are cool as hell)
color variety (no longer just pastels)
More natural hair and makeup
online registries
wedding websites

go away:
the poufy cupcake dresses (you know the "pick up skirts")
chocolate brown with pink or blue or tiffany blue
disposable cameras on the tables (pointless now that everyone has digital cameras)
the rule about not wearing black to a wedding
proof books (these are now almost always online)
stay:
the "guestbook frame" - a pic of the couple with lots of space on the mating for everyone sign. much more useful that a book.
strapless dresses - they are much easier to alter, look very elegant, allow you to wear jewelry without looking cluttered and are easier on the manufacturers
bridesmaids not wearing the exact same dress
black cocktail dresses almost being standard at evening weddings
online wedding albums

I have been to a few in the past 5 years that had wishing wells for the couple.You take an envelope and put the cards and money in them.They put it by the couple and you just walk up and put yours in it.I noticed that not too many presents are being brought to weddings or receptions.Who knows,I like the well idea...

I agree with other ppl that brown paired with any color is cute now, but already overdone.
That, and I think dresses with pick-up skirts will look totally dated when you look back on your wedding pics. Kind of like the huge poofy dresses and veils from the 80's. You know what I'm talking about.
I also think photo mat guest books will replace traditional guest books.

I believe a little colour in a wedding dress is getting more and more popular.
Chocolate fountains instead of cake
Spending more money on food to get top quality instead of flowers.
Instead of a guest book people sign the border on a picture of the couple.
Don't forget to let your personality shine threw... don't do all traditional, for example if you like your pet dog, have her there in the wedding party.
