A friend of mine told me that I'm not supposed to add the mayonnaise when the eggs are still hot- that it'd make me sick, but I do it all the time. Any input would be greatly appreciated!

I always eat it right away and refrigerate the remaining egg salad.

You wouldn't want to leave it sitting around, because salmonella can develop. But if you make it and eat it or refrigerate it right away, it's fine. Mayo can be hot, or cooked, but it can't sit at unsafe tempretures (40-165 degrees) because that's the tempreture at which bacteria can grow.

You can always chill down your eggs in a bowl of ice water before you crack them. 10 minutes usually does the trick. Then your egg salad will be nice and cool.

I used to do this all the time, there is no harm in it as long as you are going to eat it right away or refrigerate it. The only reason I dont do it this way now is that I have found it ALOT easier to peel eggs that have been put into a bowl of ice water right after they are done boiling... they are cool by the time they hit the bread.

Hot, no. But warm, yes. Just from sitting in cold water for 10 minutes after the draining. After all, it goes straight in the fridge until it's ready to be made into a sandwich. We've never gotten sick this way. Plus when they're warm they're easier to run through the potato ricer.

I do the same thing...warm mayo makes people sick when it is left out to get warm and bacteria grows on it. If you were to leave egg salad out on a picnic table all day you would get sick.

I actually slather mayo on the Thanksgiving turkey before I cook it. It browns the skin up nicely. No one has ever gotten sick.

i always do it. i like the egg salad to be warm when i put it on my toasted potato bread!
