By tradition Moses, yes. But it is entirely possible that it remained oral traditions for some time, and only written down gradually. We simply have no reliable information.

The Old Testament was written by patriarchs and prophets who were inspired by the Holy Spirit. Some of them have experienced direct instructions from God. Some received messages through messengers such as angels, some through dreams. And about your question on Moses, he is the author of the first five books called the Pentatiuch(from Genesis to Deutoronomy).

It's all there.

"Ironically, the new archaeology represents something of a circling back to what was once known as the "Higher Criticism," a largely German school of biblical study that relied solely on linguistic and textual analysis. By the late nineteenth century members of this school had arrived at the conclusion that the first five books of the Old Testament--variously known as the Five Books of Moses, the Torah, or the Pentateuch--were not written by Moses himself, as tradition would have it. Rather, they were largely products of a "post-exilic period" in which Jewish scribes, newly released from captivity in Babylon, set about putting a jumbled collection of ancient writings into some sort of coherent order."

There is much debate about whether Moses himself wrote even the Pentateuch, but even if you grant that, there is a whole lot more to the Old Testament than those books.
