whipped garlic and herb butter...just a small amount helps bring out the fantastic flavor of a good steak

I really prefer to marinate my steaks and then put nothing on them. Sometimes a pat of a good herb butter is good when I feel like being really decadent. Occasionally I will put some blue cheese on top or serve mushrooms on the side.

Salt and freshly ground black pepper is all a good steak needs in my opinion. I will slice an onion thick (about half an inch) an brown the slices lightly over the charcoal and serve them on the SIDE of a nice steak once in a while.

Bearnaise sauce is unspeakably good. It's made with butter, egg yolk, white vinegar, and tarragon.

Blue cheese crumbles also rock.

Grilled onions and green peppers and sauteed mushrooms. Otherwise, lightly salt with kosher salt and grill over charcol or wood until rare-medium rare.
