It will work as in it will cook the pork. I would add a little more seasoning because the seasoning is made to go directly on the pork, so if you don't they will be lacking in flavor. you can also season them a little more after they are done being cooked. It would probably taste good. it will take a while to cook though.

Pork chops aren't really meant to cook this way and may dry out even though they are in liquid.
The only way to know is to try it. But I would have probably done it the traditional way. I assume you are trying to not use the oven due to it being summer?

Pork baby backs! I put a dry rub on them after I've removed the sinewy membrane from them and rinsed in cold water. I let the rub sit on the refrigerated ribs for 4-6 hours, and cook in my smoker over hickory or cherry wood chips until they are tender, but not completely falling off the bone. I serve with a mustard/vinegar based bbq sauce on the side!

I make pork roast all the time in crock pot. I season it very well as the time i didn't it was not very flavorful.
i chop onions, carrots, hot peppers, a bit of coconut milk, thyme, oregano and a bouillon cube.

sounds like it would be ok.
make sure there is enough water, as more will likely evaporate out of the crockpot than out of a sealed bag and you don't want dried out chops.
