How old are your clubs?
Why do you want to get them re-shafted? I ask, because I would definitly say that you should get them regripped if you are getting them reshafted, and if you are going to do both, it will cost you about $80-$100 USD. IMHO, I would rather buy new Irons with new grips and new shafts custom built to my specifications rather than do the reshafting/regripping.

Getting new grips is a great opportunity to get something that really feels good to you. In addition maybe you need a slightly larger grip than what you were using.
As to reshafting I have to agree and ask why? Fitter told you they were too short or the flex was wrong. If you are just going to get the same shaft thinking the old ones wear out, they do not. The grips will long before the shafts show wear. If the clubs are over 5+ years maybe it is time to look at new clubs.

Unless you have a way to remove the grip from the old shaft without destroying it you have to replace the grip.

Pretty much. The grips are typically held in place with grip tape and it's pretty much impossible to remove them without damaging them.
Most better golfers will re-grip their clubs at least once a year anyway, so it's really no big loss.

if the old shaft is no longer going to be on the club, how can you not replace the grips? unless the old grip is on the club face, you are going to have to replace all of the grips

99% of the times yes you do. Usually the grips are secured in such a way that the only way to remove them is to cut them off.

it is possible to keep the same grips but they will likely get damaged in the removal and its not very expensive to get new grips so just get new ones with your reshafting
