If it happened to be the God the Christians follow then yeah I would still defy him. I would believe he was there, but I wouldn't follow him. Why? Because he hasn't done anything good as far as I know (besides creating life and seeing as how that turned out I am not sure that was a good thing). He killed thousands of people, order the deaths of millions more and lets humans suffer and die. The most horrible things imaginable have been done in his name and some of the worst people that ever lived said they lived for him. Why on earth would I follow that. Honestly I would rather burn in hell for eternity then worship a monster.

If it was some other God though or if he was unlike how the Christians describe him (which I wouldn't be surprised if that were the case considering the origins of the bible), well you never know then. Maybe I would.

Why would you assume that someone living the life they choose automatically means they're defying "God"? What if the life someone chooses is a very good life?
My life wouldn't change if I became a believer, and I don't think I would be defying God by that, either.

I would live the life I choose. Isn't that why god put us here? To live. I would acknowledge him but I wouldn't worship.

Men does want to follow God...but some are just too weak to resist bait & temptations from satan who is opportunistics enough to snatch God citizens to their own destructions.

This is where help from strong God believers & faithfuls are needed.
Help to witness by practical living, teach God`s idealism, promised and rewards.
Help in prayers for their strength to go against evil advocacy, God`s Holy Spirit influenced in knowing the truth and which pathway to follow.

Of course people would follow the God religion if it were proven true. Some might protest God's reign and actions, but they would still believe in him. Surely no one is stupid enough to just say "Screw that God guy who's going to make me burn in hell for eternity just for saying this." Like I said, they may protest, but not just decide to not follow the religion with no purpose.

I'm not sure, as if there was overwhelming proof for God, then there would be much that he would have to explain such as ignoring the majority of humanity for thousands of years, essentially condeming them with out a chance or even punishing the whole of humanity for Adam and Eve's mistake, not to mention why being naked wasn't wrong until they knew it was wrong....
