Isn't it odd that as a British person I don't know if I am really qualified to comment on English?!
Over half the world speaks English and each has its own etiquette - and quite right too
However, true British etiquette (a dying art form!) would not approve of 'nice to meet you' - that is considered most vulgar and is a dead give away as to ones social standing. Something that everyone tries to pretend is no longer in existance - but in GB it will never go away!
So - just as a note of interest.
The correct British way of meeting and greeting is:
Formal. 'How do you do?' To which the response is 'How do you do?' - strange but correct!
Informally. 'Hello or Good morning/afternoon/evening'
Sadly - these terms are dying out and you will find the main greeting on the streets will be an import from the USA such as 'hey' - equally odd really!
One does here the occasional 'Wazup' in the more urbanised areas - and similar such salutes - but very much among the very young and the avid television viewers!!
Hope this helps - perhaps not in everyday conversation - but perhaps as a improptue English lesson!
Good for you to take an interest!

I usually say, "And you."
Edit: It's not entirely correct, Beth. The question marks should fall inside the end quotation marks. Also, commas are appropriate before an open quotation mark if the quote is not a continuation of the sentence itself.
Overall, though, I agree. Your punctuation is superb for a non-native speaker!

"It's nice to meet you, too," is standard. It's polite. They told you they're happy to know you. It's nice to respond in kind.

To say both would be wonderful! It's so nice to know that there are still people out there who actually care about manners and courtesy!
Hats off to you!!

Both will work. The Brits seem to like the phrase "Likewise I'm sure."
My response is always, "Why?"
