You can make the classic French sauce "Tapenade", which you can then put on anything from crackers to chicken or lamb:
TAPENADE
8 oz. black, pitted olives
2 oz. capers
1 can (2 oz.), anchovies, drained
5 cloves garlic
Juice of half a lemon
Olive oil as needed
Puree all the ingredients in a food processor except the olive oil. Then add the olive oil in a thin stream until a spreadable paste is achieved. Other additions to the tapenade include sun-dried tomatoes and various herbs.

They dissolve quickly into a paste in hot oil which makes a great, smoky rich base for sauces.

My mom and dad used to eat them on saltine crackers with some hot mustard on them for lunch. Mom also used to mix some mayo with the mustard to 'cool it down' a bit.
Simple, easy and good:o)
If anyone remembers the j. geils song: 'no anchovies please', let me know. I have it if you want to hear it again. (very hard to come by)

You can put them on a pizza, or make a Caesar dressing with them.
