I might make meatloaf tonight-without bread, cereal, or oatmeal (I´m on a low carb diet), so I need another ingredient for a substitute.

Any ideas?

4 lbs 75% ground beef
2 cups chopped onions
1/2 cup of garlic chopped
1/4 cup mustard (creamy)
1/4 cup ketchup (i used reg, not low carb)
few shakes of worcestershire sauce
4 eggs
1/2 cup of light cream
1/2 cup of water

Mix all ingredients.

Bake in 350°F oven for 60 min.

Well, you're looking for some kind of a binding agent, but there really aren't a lot of choices. Something like saltine crackers, as the previous posted suggested, get you nowhere - it's still bread.

Just leave the bread off altogether, and basically have a hamburger loaf with flavorings. I don't think the bread adds that much in the way of carbs anyway, but just drop it. This is an Atkins diet, I take it?

I'd just make a spiced, herbed hamburger loaf. You're not really going to easily find a bread substitute that doesn't have carbs of its own. So just forget about it and make the loaf.

Here is recipe for Porcupine Meatballs. Perhaps you could just put it into a loaf pan, and call it Meatoaf.
1 1/2 pound lean ground beef
2/3 cup long-grain rice, uncooked
1/2 cup water
1/4 cup finely chopped onion
1 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 large can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce
PREPARATION:
Directions for porcupine meatballs
Mix ground beef with rice, 1/2 cup of water, chopped onion, seasoned salt, garlic powder, and pepper. Shape porcupine ground beef mixture by tablespoon into 1 1/2-inch balls.
Place the porcupine meatballs in an ungreased 2-quart shallow baking dish.
Mix the remaining ingredients and pour over the porcupine meatballs. Cover and bake at 350° F. oven for about 45 minutes. Uncover and bake porcupine meatballs 15 to 20 minutes longer.
Porcupine meatballs serve 4 to 6.

There is a version of stuffed meatloaf in Greece. Here you´ll find the recipe:

It does have bread crumbs, but it can actually be done without. Also, instead of celery, I recommend parsley. If you do not care to use a whole beaten egg in the mixture, just put an eggwhite. I do not know if this recipe helps but it tastes good! :-)

Believe it or not when I was doing low-carb and frequented the forums some of people used crushed pork rinds for a binder. They swore it didn't alter the taste. Personally I would add an extra egg.

thats easy..
add crackers crumbeled
add Oatmeal Rolled Oats
cous cous
left over cooked rice
diced ( or riced )par boiled potatoes
mashed yams too
but alas these all contain carbs. enjoy life live clogged!! artery that is!!

Ritz crackers make it taste pretty good Some told me that they
use some "Stove Stop stuffing" too unless that is considered bread.
