Great! you are indeed a lovable son with lot of virtues in life.Excellent thought and you should celebrate your fathers sashiyabthapoorty. As you know birthdays are normally celebrated either on the birth star day in the calender month (Eg. Malayalees normally follow the star eg. Aswathi in Edavam etc) or the english date of birth. Ideally the birthday should be celebrated on one of these days as per your custom and practice to make it more relevant. You can follow the following procedure:
1. Invite the close relatives and people who are close to your father.
2. Arrange a special pooja in the nearby temple or where your father normally goes.
3. You can arrange a good meal for some inmates of an orphanage or old age home or for the children of nearby school.
4. Arrange a good meal for the invited guests at home or if the crowd is large, in a hall or public place.
5. Gift your father with some surprise gifts - an air ticket for father and mother to visit a holy place or holiday spot., A nice music system or anything which is really useful to him.
6. Arrange a second honeymoon trip to father and mother !
7. If he is not very financially sound, you can arrange a monthly income scheme for him so that he will feel financially independent.
More than anything else, please provide him the company of all kith and kin and the best of everything.
You have won his blessings and heart. Pl go ahead.
Cheers

I think you may celebrate it on his 60th birthday... Or the following weekly holiday...
If possible you may include your mom also along with your dad... You may arrange some hawanam or a katha... And let both of them perform hawanam or pooja together...
Cut a cake also…
It may be followed by a dinner for about 50 odd relatives / friends...
