You would have to get a signed consent form first and let them know if there will be a profit or not. Otherwise, you could be charged with invasion of privacy.

First, hire a lawyer to get better advise that the free stuff here.
However, have them sign releases, make sure that they were adults and sober when they signed, pay them a stipend to make sure. Pay them by check so that you have a cancelled check. Make sure you have a copy of their license and another form of ID.
And lastly, do NOT throw the releases away, ever.
