Make a compound butter. Soften a stick of butter. Then add your favorite herbs and seasonings. Then wrap in plastic wrap and then in foil and twist both ends and shape it to make it like a Tootsie Roll. Freeze until ready to use. Then take a couple slices of Brioche bread, spread with your compound butter on the outside. Place on hot pan. Take your favorite cheese, put it on top. Take some tomato slices seasoned with salt and pepper and put on top of the cheese. Add top slice and press down with spatula. Flip after bottom slice is golden brown. After second slice is golden brown and cheese is melted, serve on plate and slice diagonally. Happy cooking!

I eat grilled cheese sandwiches for lunch almost every day. This is my favorite way to eat them:
Slice a piece of nice crusty french bread in half lengthwise. Spread some butter on one side. Add enough cheese to cover the bread (usually mozzarella or cheddar but any good melting cheese works here) and add sliced onion and tomato. Sprinkle some salt and pepper on the tomatoes and close the sandwich. Put some butter in a pan and place the bread in the pan. Put a weight on the bread until it browns. Turn over to brown other side. Yum!

First i like wheat bread for a grilled cheese sandwich. Rather then buttering the bread I just melt alot of butter in the pan, you will need to add butter as you cook it. lightly brown bread on each side and remove from heat for a second to add your inside stuff. I like a little mayo, some dry salami, and either mozerrela, provolone, swiss, or chedder, ham is good also. Put your sandwich together put back on heat and brown it up real good over medium to low heat, turning often , make sure it gets all melty and good.

I've heard that phrase in American TV programs. What they depict is what I would just call 'cheese on toast', but it literally is grilled, so 'grilled cheese' is a perfectly sensible name for it. "But when cooked in a pan with some butter, it is a browned egg? Or perhaps a grilled egg?" No, something is grilled when it's cooked under a grill. That's why it's called grilled.

I take a light wheat bread, extra extra sharp Cheddar & butter.
Butter one side of each bread and put in a hot saute pan until brown. Then butter the other side of one piece and flip. Add the cheese to the browned side and put the other piece of bread on top, brown side in. When the side that is down is brown, butter the last side and flip. Cover witha lid and cook until the bottom is brown. By then the cheese is perfectly melted and the sandwich is perfectly crisp and cheesy!

What is your favorite melted cheese. This does make a difference. My favorite is use provolone cheese. I put bacon on mine (sometimes with tomato) and grill the bread in the oil from the bacon i am using on the sandwich.

.use Velveeta cheese mm mm good, My daughter makes the best grilled cheese. She does not use butter on her bread, she uses "Pam type spray" as she thinks butter makes it too greasy as she says. I pm the other hand like the butter (not margarine and Velveeta Letta you monitor the amount of cheese I like to put pickle slices in the middle either sweet pickles or dill or your choice, I have heard that people put bananas and yes even a slice of pineapple in the middle.
All are good if you ask me........I love cheese. Try other cheese too. some cheese melts better than others but the possibilities are limited only by your imagination. let your imagination go...be creative

Cook's Illustrated magazine had a great recipe and technique for the perfect grilled cheese sandwich, and now that you have reminded me of it I'm going to look it up and pass it on!

I can give you the recipe I just make for supper tonight: I used seeded rye bread fresh from the bakery, I bought some very thinly sliced smoked turkey, some swiss cheese, also sliced, bacon, roma tomatoes and avocados. I lightly buttered the bread and also put a dab of butter in the skillet, I put in a slice of bread, topped it with a slice of cheese then a slice of turkey, 3 slices of bacon, 3 slices of tomato, some avocado slices, another piece of turkey and another piece of cheese then topped it with the second slice of bread. Grilled it to a golden brown and YUM.......SO good!!!

I have to say, I'm a grilled cheese purist. I like them any way, but my favorite is extra sharp cheddar cheese on regular buttered white bread.
