I have a very large exended family who come for Christmas and during the summer. I'd like to have a breakfast for them to heat and eat. I need a recipe for at least 50 servings.
Don't want pastries, need egg/sausage/or other common breakfast foods.

Breakfast Casserole

INGREDIENTS
6-1/4 (10.75 ounce) cans condensed cream of chicken soup
6-1/4 (16 ounce) containers sour cream
6-1/4 (2 pound) packages frozen hash brown potatoes, thawed
6-1/4 cups cubed, cooked chicken meat
6-1/4 cups diced ham
6-1/4 onion, chopped
4-2/3 cups shredded Cheddar cheese
6-1/4 cups crushed potato chips
1-1/2 cups and 1 tablespoon butter, melted
DIRECTIONS
Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

Charleston Breakfast Casserole

INGREDIENTS
75 slices bacon
1-1/2 cups and 1 tablespoon butter, melted
18-3/4 cups croutons
12-1/2 cups grated Cheddar cheese
37 eggs
11 cups milk
6-1/4 bell pepper (any color), diced
1/3 cup and 1 tablespoon prepared mustard
salt and pepper to taste
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 325 degrees F (165 degrees C).
Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

Breakfast Casserole

Prepare day ahead and pop in the oven on a holiday morning! You may substitute ham or sausage for the bacon or the broccoli if you wish.

INGREDIENTS
2 pounds bacon
2 pounds broccoli, cut into florets
33 slices bread
1/2 cup and 1 teaspoon butter, softened
3 cups and 2 tablespoons shredded Cheddar cheese
50 eggs
8-1/3 cups milk
2 teaspoons dry mustard
salt and pepper to taste
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Place a colander and two cups of water in a small stock pot. Add the broccoli and bring water to a boil. Cook until tender but still firm, about 10 minutes. Drain, cool and chop.
Lightly butter a 9x13 inch baking pan. Lightly butter bread slices. Line bottom of baking pan with bread slices. Cover bread with cheese, bacon and broccoli.
In a large bowl, beat together eggs, milk, mustard, salt and pepper. Pour egg mixture into pan. Refrigerate overnight or bake immediately.
Twenty minutes before baking, preheat oven to 325 degrees F (165 degrees C). Bake until eggs are solid, approximately 60 minutes.

Make Ahead Breakfast Casserole Ingredients: 1 lb bulk pork sausage 10 cups fresh bread, cut into cubes 10 ounces chopped broccoli, thawed and drained 4 ounces mushrooms, drained 8 ounces cheddar cheese, shredded 6 eggs, beaten 3 cups milk 1 cup Miracle Whip 2 tablespoons flour 1 tablespoon dry mustard 2 teaspoons dried basil 1 teaspoon salt Steps: 1. Brown sausage, drain. 2. Add bread cubes, broccoli, mushrooms and cheese; mix lightly. 3. Spoon into 13 x 9 baking dish. 4. Pour combined eggs, milk, dressing, flour and seasonings over bread mixture; cover. 5. Refrigerate at least 1 hour or overnight. 6. Heat oven to 375 degrees. 7. Bake, uncovered for 1 hour. Try breakfast pizzas. They can be made ahead of time and then re-heated in the oven or microwave. I make them for my kids during the school year so they have something quick in the morning.

Rhodes Texas roll dough (unthawed)
scrambled eggs
cooked sausage links (sliced) or cooked crumbled sausage
diced cooked bacon
diced/cooked onion, peppers and/or mushrooms
shredded Cheddar or Jack cheese, or a combination of both

Let rolls unthaw, separated on a baking sheet, covered loosely with a dish towel so they don't dry out.

While rolls are unthawing, prepare toppings.

When rolls are unthawed, roll each out to a 5" circle. Top with egg, meat choices, vegetables and finish with a sprinkle of cheese.

Bake at 350 degrees F on a baking sheet for approximately 10-12 minutes. Remove from oven and let cool on a wire rack. Place breakfast pizzas in individual freezer bags and freeze until you need them.

These can be re-heated in the microwave or wrapped in foil and re-heated in the oven.

I did this recipe in a Lasagna pan and fed 45 but we had lots of other food too.
layer bread or potatoes (you can buy frozen hashbrowns or slice your own from leftover baked potatoes) across the bottom of the pan. the deeper the better but use your disgression.
beat 1 - 18 pack of eggs, set aside-If you want this fluffy you can separate the eggs and beat the whites to med peaks then fold into yolks just before adding to recipe.
Add already cooked meats, crumble sausage across the top of base, break up bacon, use chunks of leftover ham from Christmas dinner.
I put green chilies in mine and red bell peppers (minced)
Pour egg over top of ingredients.
At this point you can freeze for later or put in refrigerator until morning (about 7 hrs).
Remove from fridge and bake at 350 until eggs are set. Add cheese if you like now to top and bake a few more minutes until cheese is melted and golden.


Also you can do a Chile rellano casserole and freeze until later or bake right away.
Layer egg, green chilies, meat of choice, cheese, green chilies, cheese more egg until pan is full. top with cheese bake 350 until set and golden! This is my favorite winter potluck dish, I can take it for brunch or dinner and anything in between!

of course your going to need to double or triple ingrd.
Cook a large pot of rice(instant is best)
you will need cans of chicken Broth
also cans of cream of chicken
Jimmy Dean sausage(I like the maple flavor for this dish)but what ever kind you like is fine.
Shredded mild/moz cheese

Cook rice as directed
cook the sausage
In a large bake ware add the cooked rice and sausage
add cream of chicken,chicken broth and cheese mix all together and spread out in bake dish,Then add a little cheese over the top. Pop in a 350d oven until cheese melts.

For this dish it causes for 2 bags of rice,2cans of cream of chicken,and 2 cans of chicken broth.As far as the cheese goes, it's according to your likeing of cheese.
So you can go from here on how much ingredients you will need. I'm thinking if you get one of those large tin pans from the store that would be plenty. I would cook about 12-15 bags of the rice, and if you can find the large cans(like the restraunts uses) of broth and cream of chicken, use 2 of each on that and sausage use 3 rolls.
This is a breakfast dish, I use to cook it for my sunday school class before I moved.
On your cream of chicken,make sure it is campells,those other brands taste nasty.

Cheese Strata with Ham and Tomatoes

1 teaspoon plus 1 tablespoon unsalted butter
12 large eggs
1 1/2 cups milk
1/2 cup heavy cream
Pinch freshly grated nutmeg
Pinch cayenne pepper
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup diced baked ham
1 cup Oven-Dried Tomatoes, chopped, recipe follows
1 tablespoon minced flat-leaf parsley leaves
1 1/2 teaspoons thinly sliced fresh chives
2 cups shredded extra-sharp cheddar cheese (about 8 ounces)
1 pound sourdough bread (boule preferred), crust removed and cut into 1-inch cubes

Grease a 3-quart gratin dish or casserole with 1 teaspoon of the butter.
In a large bowl, whisk together the eggs, milk, cream, nutmeg, cayenne, salt, and pepper. Set aside. In a small bowl, toss together the ham, tomatoes, parsley, and chives.
To make the strata: Scatter a 1/2 cup of the cheese over the bottom of the buttered dish, cover with one-third of the bread, and then half of the tomato mixture. Repeat. Top with a final layer of bread and remaining cheese.
Pour the egg mixture over the strata and gently press it down with the back of a large spoon to make sure the top layer is moistened with the custard. Melt the remaining 1 tablespoon of butter and drizzle it over the strata. Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350 degrees F. Bake the strata, uncovered, until golden brown and slightly puffed, about 45 to 55 minutes. Let rest 10 minutes before serving.
Yield: 6 to 8 servings

Oven-Dried Tomatoes
2 pounds ripe plum tomatoes, cored and cut in half lengthwise
1 1/2 teaspoons kosher salt
Extra-virgin olive oil (optional)
Fresh herb sprigs, like thyme, rosemary, or sage (optional)

Preheat oven to 250 degrees F. Arrange the tomatoes cut side-up in a single layer on a baking sheet. Sprinkle with the salt. Dry in oven until slightly shriveled but still plump, about 5 to 6 hours.
If not using immediately, store the tomatoes in a sealed container in the refrigerator, for 3 to 4 days. Alternatively, layer them in a container with the herbs, cover with olive oil, and store, covered, in the refrigerator, for up to 2 weeks.
Yield: about 2 cups

They both are Just the thing for your health. If you eat both, you're better off. But yea, I had choose fruits because they taste better.

It will depend on the fruit or plant involved with a comparison. If perhaps you compare a farreneheit to a carrot, the carrot is the better of the two nutritional. When you compare an avocado to the carrot, then an avocado is better. Both equally the apple and avocado, are fruits.
