I care so much about him... I really do. he's mentally unstable and I need to accept that . he's now gone from my life as he can't handle a relationship and it hurts me deeply. Has anyone else been through this same situation?

Yes, I have.
I walked him into the Psyc Ward at the hospital.
At the end of his stay, his dad came and checked him out.
He moved in with his dad
When he got worse his dad put him into a longterm care home.

His dad told me he'd take care of him, and I should just take care of myself and the kids.

Yes, I can relate. When Me and my (ex) husband met, he told me he was Schizophrenic so, hey, I just thought that we all have something wrong with us but some people just happen to have a "label." We stayed married 51/2 years but he just kept getting worse. He is now in a home with others of similar situations. We still talk and of course when we are able to go see him(2hrs away) I take our son to visit him. He still talks about us getting back together which we've been split up for almost 6 years. It does hurt to be in that situation.
Good luck with moving on.

Thousands of people go through this everyday. I went through it with my first wife. 30 years later I finally found a good mentally stable woman (which is rare) and remarried!
