I was making jello the other day and I wanted to add fruit to it. On the box it said not to add fresh or frozen pineapple or kiwi. Why can you not put those two fruits in there, and what would happen if you did put them it it???

Enzymes in such foods as pineapple and kiwi break down the gelling ability of the gelatin so that it may not set. Cooking these fruits before adding them, however, neutralizes the enzymes so that the gelatin can set.

I just tried fresh kiwi in lime Jello and it did not gel. Just wanted to put some fruit in the Jello and that was all I had so....now I know. I have had pineapple before and it was fine, but it was canned

The acids and enzymes in both will not allow the gelatin to set. Canned pineapple is okay - I do that all the time. I can't imagine wanting to put kiwi in jello - kiwi should be served cold, cut in half, and eaten with a grapefruit spoon! [drool] And YELLOW kiwi are *wonderful*!

I've added pineapple to jello and it turned out fine. It was canned so I don't know if there was any difference. Just try it and see what happens. Sometimes those packages aren't always right.

It is because pineapple contains an enzyme called bromelain which breaks up the gelatine in the jello into its amino acid building blocks. When the pineapple is canned it is heated up in the process, denaturing the bromelain (making it inactive), therefore allowing the jello to solidify

sparkling pineapple does not artwork in jello by using acid in it or some thing like that yet canned pineapple works basically positive, i be responsive to because of the fact I tremendously much continually positioned pineapple in my jello

Could be the cellulose but I have added both with no problem. Pineapple carrot is a family favorite from an old magazine - so they used to endorse it.

What about fresh orange juice? Will Jello set with fresh orange juice in the mix?

I never heard of that. My mom has alway made a Jell-o dish with grated carrots and crushed pineapple. Never a problem.
