I would leave them on, they provide the crunch.
But it depends on the age/size of the cucumbers.
The older/larger ones will have tougher skin.
In which case, you may want to remove 'some'.

I think it's a matter of personal preference and the size of the cucumber. the bigger they are the thicker the skin

I do... I think tho that some people leave the skin on.
