I've made spanikopita(spinach pie) and I have left over puff pastry. Any ideas?

Baklava, traditional grrek pastery, very delicious layers of butter and walnuts tossed in cinnamon. amazing hoey sauce on topr after it;s done baking...

INGREDIENTS:
· 1 (16 ounce) package phyllo dough
· 1 pound chopped nuts
· 1 cup butter
· 1 teaspoon ground cinnamon
· 1 cup water
· 1 cup white sugar
· 1 teaspoon vanilla extract
· 1/2 cup honey
DIRECTIONS:
1. Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan.
2. Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep.
3. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.
4. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
5. Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

Considering how phyllo dough is a very thin and fragile dough my guess would be that you are not using enough sheets. How many sheets are you using to make the strudel and cheesecake? Another problem may be that you are putting in too much filling.

FILLO PASTRY
============

To Make Pastry:
---------------
Open package, cut roll of pastry into thirds. Unroll one of them, lay
out flat so you can easily take the 1/3-sheets of it.

Take one, lay out flat on wax paper. Brush both ends with melted
butter, brush middle area sparingly with butter. Put 1 to 2T of filling
at an end. roll over it once.

Now fold it up like a flag gets olded, into triangles. When you reach 1
fold away from other end, slide the whole thing down your paper, and put
another sheet on the end. Brush 'meeting area', brush other end, brush
middle sparingly. Continue folding. At end, stick still a third sheet
on. that's the last one. When it's all folded, brush some butter on
outside. Put on wire rack off to side.

For cooking, put wire rack over pan or cookie sheet, cook at 400 for
15-20 min.. (check 'em after 12 or so, they're done when they look
golden-brown)

You can also use only 2 sheets per pastry, but they're more fragile.
Trying to avoid butter, I've tried olive oil, corn oil, water, beer, and
rice flour/water mix. Nothing else works.

They seem like they should refrigerate very well.. the skin gets firm
after sitting 15 min on a counter as the butter hardens.. The non-meat
ones should last a while if in a freezer bag I the fridge.

chop up some root vegetables and season with curry, salt, pepper, add to the phyllo to make a turnover.

Brush every layer with butter and sprinkle with cinnamon sugar and bake

get some Grey Poupon and some smoked turkey sausage.
spread the mustard on the dough and place the sausage on and roll it it. Score it with knife and bake. cut in bite size pieces and eat.

I really like both of these so please try them both.

weird...i was having the same issue last night! here's what i found when i searched:
baklava (surprisingly easy to make)
feta and walnut triangles
basil, zucchini, and pine nut triangles
chocolate-raspberry "purses"

yum!

oh and could also do a brie purse with fruits in it

apples,walnuts, cranberrys ,pineapple, you can use about anything , just layer the leafs and put a little of whatever you want on each layer, sprinkle a little sugar on each layer too, when done brush the top with egg whites,and bake
