I love cooking but I dont know many recipes if anyone can please give some ideas for a good breakfast other than omelets and toast please help.

BREAKFAST BURRITOS

1 lb.bulk breakfast sausage
8 eggs
Shredded Cheese
Sliced avocado
Sour Cream
Salsa
4 flour tortillas

Fry sausage in a skillet. Drain off fat and pat dry with a paper towel. Break eggs in a bowl and scramble with a fork. Add eggs to skillet with sausage in it. Cook on medium heat until fluffy. Top with cheese.
Heat flour tortillas in microwave on a plate covered with a paper towel. Fill each tortilla with an adequate amount of egg/sausage mixture and garnish with sliced avocado, salsa & sourcream. Serve Hot.


BREAKFAST SAUSAGE CASSEROLE

2 pounds bulk sausage
10 slices bread (crusts removed)
butter, at room temperature
2-3 cups grated cheddar cheese
8 eggs
1 quart half and half
2 teaspoons salt
2 teaspoons dry mustard

Brown sausage and drain on paper towels.
Butter a 9x13 ovenproof baking pan. Spread butter evenly on 6 slices of bread and layer in pan with the buttered side facing down.

Add a layer of sausage, spreading evenly, then add a layer of cheese.

Cover the sausage and cheese layer using 6 buttered slices of bread with the buttered side facing up.

Mix together dry mustard and salt. Combine milk, eggs, mustard and salt.

Pour milk mixture over top of bread and allow to stand overnight in the refrigerator.

The following day, bake at 350°F for 1 hour.

Remove from oven and allow 20 to 30 minutes before cutting into serving sized pieces.

Can be frozen. Leftovers can be reheated in the microwave.

BREAKFAST PIZZA

On a pizza pan spread:

1 tube crescent rolls, to form 1 crust
1 lb. package thawed frozen hash browns
1/2 lb. sausage, browned
1 cup cheddar cheese grated
4 eggs beaten well with a little milk and salt and pepper

On top of crust place hash browns crumbles up, spread sausage next. Make sure that both go to the edges of crust. Slowly pour eggs over top of hash browns. Then sprinkle on the cheese all over the top. Bake at 350 degrees for 30 to 40 minutes. Cut in pizza slices and serve with fruit and juice.

Original recipe yield:

INGREDIENTS
4 egg yolks
3 1/2 tablespoons lemon juice
1 pinch ground white pepper
1/8 teaspoon Worcestershire sauce
1 tablespoon water
1 cup butter, melted
1/4 teaspoon salt
8 eggs
1 teaspoon distilled white vinegar
8 strips Canadian-style bacon
4 English muffins, split
2 tablespoons butter, softened
DIRECTIONS
To Make Hollandaise: Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water.
Add the melted butter to egg yolk mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.
Preheat oven on broiler setting. To Poach Eggs: Fill a large saucepan with 3 inches of water. Bring water to a gentle simmer, then add vinegar. Carefully break eggs into simmering water, and allow to cook for 2 1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon and set on a warm plate
While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler.
Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately.

I make a quick breakfast burrito by scrambling an egg or two with some hot sauce and salsa. Take a slice of American Cheese and fold it in half until it breaks into 2 pieces. Lay them end to end (to get a long piece of cheese) on a tortilla shell (I prefer flour but corn is better for you, you can use any flavored variety you choose for more vitamins and such) Place the scrambled egg mixture on top of the cheese, roll it up and use condiments as you see fit (some recommended "condiments": more salsa, picante sauce, guacamole, fresh salsa (pico de gallo) jalapeno peppers (pickled or fresh), sour cream, cheese sauce, etc. use your imagination. Another great one is a sausage, ham or bacon quesadilla. For a quick fix, use already cooked sausage, ham or bacon, heat it up. Crumble with a fork and put on top of a tortilla of your choice. Top with cheese and anything else you like in a quesadilla, eggs, salsa, onions, peppers, etc. Microwave until cheese is just melted. Cut into pie pieces and use any condiments you choose on top or to dip in. Yummy and quick. (If you really like meat why not use two or all three together?!?! :) )

If you like sweets for breakfast you can take a container of Grands biscuits, poke a hole in the middle with your finger, make it wider about 1/2" should do it. Fry until done (a Fryer is the best, but you can use a pan of oil on the stove, just watch it carefully!) Approximately 2-3 minutes per side. Drain on paper towels and sprinkle with powdered sugar or cinnamon and sugar.

I've got a couple of comments for you. Fruit isn't low carb or low calorie - unless you're eating blueberries or strawberries. On a low carb diet you would avoid eating any oranges, apples, bananas, kiwi fruit, etc. Really only berries are ok. Also low carb is not also meant to be low calorie. Low carb is really about swapping calories from carbs to calories with some protein and, more importantly, fat. I've been eating an enormous amount of fat on my low carb diet and have lost over 50 pounds (23 kg) over the last year. So I would recommend that you have egg, bacon & spinach for breakfast. I cook my in a dob of lard. It's delicious and will keep your hunger at bay for a long time and you'll lose weight. and saturated fat improves your good HDL cholesterol. It's actually good for you.

This breakfast casserole is absolutely delicious. Sometimes I fix the hashbrowns by themselves as a side dish for supper.

Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.

Oatmeal Pancakes

In a medium bowl mix together:
1 egg
1 egg white
1 1/2 cup milk
1/4 cup applesauce
1 tsp vanilla

Add in and mix until blended:
1 cup oatmeal
1/4 tsp cinnamon
1 cup whole wheat flour
1/8 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

Pour out onto hot griddle. Flip halfway through. Makes 10.

Top with syrup, peanut butter, whipped cream or your favorite fruit topping.

Can fix night before

Breakfast Stew

Cooked grits (about 4 servings)
Cream of chicken soup
Sauteed onion
Browned bulk sausage (to taste, I would use 1/2 pound)
Sauteed garlic
Diced cheese (to taste, I would use at least 4 ounces)
Sauteed bell pepper
Diced boiled egg. (either one or two)

Mix together with just enough water to still be a little thick

For a big crowd, serve from crock pot. For single servings just microwave until warmed.

I love Creamed Chipped Beef!!!

1 packet of Esskay Chipped Beef
1 Cup Milk
2 tablespoons butter
2 1/2 tablespoons Flour

Heat pan over medium heat... Put butter in pan, wait for it to melt, add chopped beef and let it brown around the edges.

Add all flour to beef. Stir until well mixed. Add Milk. Turn heat up to medium-high and let slightly boil... Turn heat down when boiling begins to low-medium heat. When thickened to your likeness take off heat

Serve over biscuts or toast!!!

crack eggs in bowl begin to wisk adding milk slowly until yellowish white add spices mix,melt butter on skillet or frying pan dip the bread slices in the eggs mixture and add to hot butter let cook turning to golden colored, top with cinnomon,
butter, jelly or syrup. can serve with breakfast sasuages,ham steak or fresh fruit cup...

My favorite is an egg bake, with mushrooms and onions. Second favorite is quiche, spinach is nice with onions and maybe some sausage. Both you can make in advance and cook while getting ready for work.
