HOMEMADE VEGETABLE SOUP
2 c. water
2 lbs. stew meat
1 (17 oz.) can peas and juice
1 (17 oz.) can sliced carrots
1 (1 lb. 12 oz.) can whole tomatoes
4 med. sized potatoes, diced
Salt and pepper to taste
Mix ingredients in pressure cooker and cook 1/2 hour after pressure comes upon medium heat.
Spicy Chicken Soup Recipe
Ingredients
1 c. of chopped cooked chicken breast
1 c. of chopped onion
1 c. of diced green bell pepper
2 cloves of pressed garlic
1 (10 oz) can of diced tomatoes with green chile peppers
2 (14.5 oz) cans of chicken broth
1 tbsp. of olive oil
Directions
First you want to heat olive oil in a large pan over medium flame.
Saute onion, green pepper and garlic until tender.
Then stir in chicken broth, chicken pieces and the diced tomatoes and chilies. Simmer covered for at least 10 minutes.
Serve.

Jenny's Spicy Vegetable Soup:
1 box organic chicken or vegetable broth
1 15 oz can chopped tomatos
2 ribs celery, chopped
1 cup chopped carrots
1 Yukon gold potato chopped
1 can black beans, rinsed
3 T cumin powder
1 T chili powder
1 T kosher salt
1/2 tsp fresh ground pepper
1 small can diced green chili
1 Tsp chopped pickled jalapeno
1 lime (juiced)
1/2 cup grated parmesan cheese
Simmer the above for about one hour and serve with hot bread or cheese quesadillas. Yum!

4 servings 35 min 10 min prep
2/3 cup sliced carrots
1/2 cup diced onions
2 cloves garlic, minced
3 cups fat free broth (beef, chicken or vegetable)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 tablespoon tomato paste
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup diced zucchini
Spray a large saucepan with non-stick cooking spray.
Saute the carrot, onion and garlic over low heat until softened, about 5 minutes.
Add broth, cabbage, green beans, tomato paste and simmer, covered about 15 minutes or until beans are tender.
Stir in zucchini and heat 3-4 minutes.
Serve hot.
Spicy Chipotle Black Bean Soup
4 servings 2¾ hours 15 min prep
1 cup dried black beans, soaked overnight and drained
1 tablespoon olive oil
1 medium onion, chopped
1-2 celery rib, chopped
1-2 garlic clove, minced
1/2 teaspoon dried chipotle powder
1 teaspoon cumin
1/2 teaspoon salt
1-2 teaspoon crushed dried jalapeno peppers (may be left out)
2 teaspoons dried cilantro
pepper, to taste
3-4 chicken bouillon cubes
5 cups water
1/4 cup shredded cheddar cheese
lime wedges
Soak the beans overnight in plenty of cool water. Drain.
Heat the oil in a stock pot and cook the onion and celery for 3-4 minutes on medium. Add the garlic during the last minute of cooking.
Add the beans to the pot, followed by the chipotle powder, cumin, jalapeno flakes, salt and pepper.
Pour in 5 cups of water and the bouillon cubes.
Simmer 2 hours on low.
Remove about half of soup to blender (or use hand blender) and process. Return to pot. Continue cooking an additional 30 mins to thicken. Sprinkle with cilantro flakes.
Ladle into bowls and top with some shredded cheese and a lime wedge.

BLACK BEAN VEGETABLE SOUP
INGREDIENTS
2 (15 ounce) cans of black beans, rinsed and drained
1 (8.75 ounce) can of whole kernel corn
1/4 tsp. ground black pepper
1 (14.5 ounce) can of stewed tomatoes
1 chopped onion
1 minced clove garlic
2 chopped carrots
2 tsp. chili powder
1 tsp. ground cumin
4 c. vegetable stock
1 tbsp. vegetable oil
DIRECTIONS
Put a little olive oil over a medium flame. Add your onions, garlic, and carrots, until the onion is tender.
Next you will throw in your chili powder, and cumin. Let this cook for about a minute.
While still stirring, add the stock, can of beans, corn, and then your pepper.
This will need to come to a full boil.
Let this simmer for approx. 15 min, letting the carrots get tender!

Try this one: it is delicious and you can add crushed red pepper, or whatever spices you would like to add the zest you are looking for.
HOT ZUCCHINI SOUP
4 cups sliced zucchini 2 cups grated cheese 2 lbs pepperoni
2 pkg onion soup mix 28 oz jar spag sauce
Mix soup and sauce, add zucchini, pepperoni and cheese. Cook over medium heat til zucchini is done (about 20 min.). Serves 8

VEGGIE CABBAGE SOUP
INGREDIENTS
1 Head cabbage
6 Cups water
2 Bay leaves
6-8 beef bullion cubes
1 can tomato paste
Veggies of your choice
DIRECTIONS
Add all ingredients to large pot or slow cooker boil or cook until veggies are soft. I like green beans, corn, onion, mushrooms, zuchinni, tomato, etc...
TIPS
Add in 2 teaspoons or so, of crushed red pepper to spice the soup up.

SPICY GARLIC POTATO SOUP
2 tbsp. butter
4-10 cloves garlic (depending on your taste), minced
1 c. La Victoria Salsa Supreme or other hot salsa
1 tbsp. flour
2 qt. hot chicken broth
8-10 med. potatoes, peeled & cubed
Optional: Sliced carrots, zucchini or other veggies
2 c. Monterey Jack cheese, cut into cubes
Heat butter in 3 quart saucepan and add garlic. Brown slightly. Stir in salsa and simmer 2-3 minutes. Stir in flour and cook for 2 more minutes. Continue stirring as you pour in the hot broth. Add potatoes. Simmer over low heat for 20 minutes. Add vegetables if desired and simmer another 15 minutes. Place cubed cheese in serving bowls and ladle soup over it.

I just cut up a bunch of potatoes, onions, and mixed veggies like carrots, green beans, corn and green peas, and put them in a large pot. I cover the veggies with water, and start adding cayenne pepper, black pepper, garlic salt, and butter. Boil it until the potatoes are almost tender enough to fall apart.
You can add browned hamburger meat to the mixture, and that makes my husband happy.

It is determined by the fruit or veg linked to a comparison. If perhaps you compare a farrenheit to a carrot, the carrot is the better of the two nutritional. When you compare an avocado to the carrot, then an avocado is better. Equally the apple and avocado, are fruits.
