you could try making chicken Alfredo .all you need is to boil the chicken,egg noodles,ragu Alfredo sauce mix and bake with crumbled crackers on top and enjoy.

BUTTERED CHICKEN BREAST FOR TWO
2 boneless, skinless chicken breasts
1/2 tablespoon garlic
pinch of salt
1/2 tablespoon pepper
2 tablespoons butter
Preheat oven to 375°F.
Combine all of the above ingredients, except the chicken in a microwave safe bowl.
Microwave until butter is melted. Set mixture aside.
Wash chicken breast and place in an 8 inch square cooking pan.
Pour mixture over chicken breast, then flip the chicken breast over to make sure it is completely coated.
Place in oven for 30 minutes.
ENJOY

TRY THIS ITS REALLY GOOD!
PESTO CHEESE CHICKEN ROLLS
INGREDIENTS
3 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup prepared basil pesto
3 thick slices mozzarella cheese
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Spread 2 to 3 tablespoons of the pesto sauce onto each flattened chicken breast. Place one slice of cheese over the pesto. Roll up tightly, and secure with toothpicks. Place in a lightly greased baking dish. Bake uncovered for 45 to 50 minutes in the preheated oven, until chicken is nicely browned and juices run clear.

Ok here is what I'm doing for dinner.
I have chicken breasts out
1 can of French's fried onions crushed up
1 egg
coat chicken in egg then in fried onions and bake at 350 for 30 minutes or until done.
Then I am making cheesy mashed potatoes and roasted broccoli and purple cauliflower with garlic oil.
Or
the chicken and 1 package of SHREDDED Parmesan cheese
coat chicken in parmesan only no egg no salt nothing
get your nonstick skillet and spray with pam
cook chicken on med turning only once until done. when done take out and cut up a fresh tomato and put on top
it's really good and it works and doesn't stick I promise.

BAKED CHICKEN BREASTS
1/2 tsp. celery salt
1/2 tsp. paprika
1/8 tsp. pepper
Dash of garlic powder
1/2 c. plain low fat yogurt
1 tbsp. lemon juice
1 tsp. Worcestershire sauce
3 chicken breast halves, skin removed
3/4 c. crushed corn flakes
Combine all ingredients except chicken and corn flakes; blend mixture well.
Spoon yogurt mixture over chicken to coat well. Cover chicken and refrigerate overnight. Coat each chicken breast with corn flake crumbs. Place chicken in shallow non stick baking dish. Bake at 350 degrees for 45 to 60 minutes or until golden brown; baste once. Yield: 3 servings.

I have several ways but this one is easy and tastes good.
I just put them in a none stick frying pan and fry them a few minutes, just until brown (2-3) minutes each side.
Put in oven on a greased ( you may also use Pam) cookie sheet or a small pan with a rack on it and bake at 325 for about 45 minutes, turning every 20 minutes or so. You may eat like that with a salad or you can even cut them in half, if you use boneless, or cut the meat off and put them on a good bun with anything you like and eat them like that.

I cut a pocket into them and stuff them with different things, you could use regular stuffing, ham and swiss cheese, different cheeses, broccoli and cheese etc, I put them in an egg and milk bath then bread them with progesso Italian style bread crumbs. I put about an eighth of an inch or so of olive oil in pan frying pan and sear the outside and finish them off in a 350 degree oven for about 15 minutes or until the juices run clear. this is a really easy one and healthy too.
1 red pepper, deseeded and chopped
1 large onion, chopped
1 garlic, finely chopped
2 tbsp olive oil
1 tbsp lemon juice
20 g butter
Lay the breasts on a baking tray, season with salt and pepper. Mix pepper, onion, garlic, olive oil and lemon juice in a bowl and pour over the chicken. cook in the oven for 20 minutes on gas mark 6.
Serve with green salad.

place them on a square of tin foil, add t tblspn of butter or marjorine, garlic, paprika for color and black pepper, roll the foil closed pierce one small hole on top and broil till done.
place in slow cooker, add one large can of Cream of chicken soup and let cook for 4 hours on high, or all day on low. Serve over white rice.
