Potatos should actually be listed as a starch.
They are a starchy root vegetable.
Starchy foods generally have Carb calories without much nutritional value (vitamins, minerals, etc.). Most of the fiber, minerals, etc. in a potato are in the skin. This is why most dieticians suggest leaving the skin on now a days.

A potato is a vegetable. It grows in the ground like cucumber.
You just cut them in half and bury them and they grow. That's about it. It is a root veggie.
