Combine in a blender - 1/4 cup olive oil 3 garlic cloves 1/2 cup basil and 1/2 teaspoon kosher salt and coarse ground pepper - pulse until garlic is integrated. Rub or paint all over the lamb and cover - let sit for 1-2 hours in the fridge. cook on 350 in the oven or grill on the barbecue for a really deep aromatic taste. Good Luck!

Rosemary goes great with lamb. Chop up some rosemary very fine, and some extra virgin olive oil to it, and then rub it all over the lamb before roasting it. It is wonderful. Throw some garlic in there too!

Try this recipe:
4 lamb loin chops
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 teaspoons crushed peppercorns
1 teaspoon Dijon mustard
1/4 teaspoon thyme
1 clove garlic, minced
Combine all ingredients and marinate at least 1/2 hour.
Broil or grill to desired doneness.

I am a former chef and like either dried or fresh herbs, rosemary and oregano are my favorites, both either fresh or dried, I mix them with some oil, and then a mash of garlic and herbs then rub it in and let it stand for 2-3 hours either wrapped in saran wrap.
Then you can either roast, grill or rotissiere the piece of lamb, I like it for both leg, loin, shoulder and rack of lamb, I also when I use rosemary, tie a few branches together and use it as a basting brush on the meat as it cooks.

Try out this marinade
INGREDIENTS
1/4 cup brown sugar
2 teaspoons ground ginger
2 teaspoons dried tarragon
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
1 teaspoon garlic powder
1/2 teaspoon salt
4 lamb chops
DIRECTIONS
In a medium bowl, mix brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. Rub lamb chops with the seasonings, and place on a plate. Cover, and refrigerate for 1 hour.
Preheat grill for high heat.
Brush grill grate lightly with oil, and arrange lamb chops on grill. Cook 5 minutes on each side, or to desired doneness.

I like using rosemary, garlic, salt and pepper. Then putting it on the grill. Also, if you want to you could use a dijion mustard coasting and add the above herbs. If you do use the dijion mustard coating add some basil.
